  1. "I hope they do not get on the kick about the lab not being reputable" Enterolab's gene test is reputable - it's my understanding they go through the same lab as the Red Cross. There are some that argue about whether or not any non-Celiac genes equate to gluten sensitivity (which is what Enterolab's doctor advocates), but you cannot argue that HLA-DQ...
  2. "Sweet Rice Flour (2 parts) 6 cups " I found this recipe elsewhere and it called for rice flour, not sweet rice flour. Are you sure it's sweet rice flour? With the potato starch and tapioca flour, adding sweet rice flour it's basically all starch.
  3. For those of you having trouble using your pan, check out these recipes off of the Williams Sonoma website. These are all great recipes that also explain exactly how much to fill up the pan and ways to flip it. I just substituted with Pamela's Baking mix, but you could easily use any gluten free flour, even without xanthan or guar gum since so many eggs...
  4. Chicken nuggets - Whole Foods often carries two brands:Wellshire Farms & Ian's. At least by the Whole Foods near us, Wellshire Farms brand (and they're shaped liked dinosaurs) is over by the meat section. Ian's is in the freezer section right next to their non-gluten free counterparts. It's sometimes a little difficult to see the difference, although...
  5. According to Wikipedia, couscous is also sometimes made from pearl millet, particularly in North Africa: "The couscous granules are made from semolina (coarsely ground durum wheat) or, in some regions, from coarsely ground barley or pearl millet. The semolina is sprinkled with water and rolled with the hands to form small pellets, sprinkled with dry flour...
  6. My son was diagnosed at 2, and he was getting sick all the time after going gluten free. He learned after about 3 months not to just eat everything he saw, but it took him until 2 1/2 not to even pick up and throw in the trash the goldfish cracker he sees on the ground. And he's a thumbsucker (still - at 4), so cross contamination has ALWAYS been a problem...
  7. Actually, you're right about them working with sorghum flour; Bob's Red Mill has another recipe that's very similar without the coconut flour. We eat these all the time. It works best with unsalted butter. If you use salted butter, I'd omit the salt. Buttermilk Biscuits - Gluten Free contributed by Carol Fenster, Ph.D. Ingredients: 1/...
  8. I just found a recipe for Indian Pakoras (something I've really missed) which uses chickpea flour, or in this case, Besan Flour. Next time I go to the store, I know I can look for this instead of just chickpea flour so that I can try it.
  9. A quick, easy breakfast for me is vanilla or blueberry yogurt (Trader Joe's Blueberries & Cream or Vanilla & Cream are my favorites) topped with toasted flaxseed (again, Trader Joe's has a great price on toasted flaxseed mixed with dried blueberries - yummy). Puffed pancakes are actually pretty easy to make, too. You mix up the batter, pour into...
  10. Those are tough - it's easier for me to go gluten free than remove all peppers! I think I'd starve to death, too But I hear that particularly with arthritis doing this produces great results. Good luck!
  11. HLA-DQ2 and HLA-DQ8, whether or not it's "positive" or "negative" are the two genes associated with Celiac Disease. HLA-DQ2 is the most common; something like 91% of the people with Celiac Disease have this one. Another 7% have HLA-DQ8, and the remaining 1% have neither. Having these genes does not mean you will definitely get Celiac Disease; over 30%...
  12. Depending on what you're making, I'm sure you could replace with another starch like tapioca or corn, neither of which are a part of the nightshade family. When I've run out of potato starch for certain recipes, I've done just that. The texture remains the same, but the taste is slightly different. Are you avoiding tomatoes, too, then?
  13. I don't think it's because it's a "cake" that they recommend using a water bath but instead because cheesecake is actually more of a custard that happens to have a little flour added. Flour is such a small part of a cheesecake, I don't even think you normally need xanthan gum and you could use nearly any gluten free flour that you think tastes OK. I have...
  14. This is actually based on an ebelskiver pan. It's a Danish traditional breakfast, and there are tons of recipes out there. Williams Sonoma also has recipes (some called ebelskiver, some called "stuffed pancakes", this one looks particularly good: Open Original Shared Link and carries a pan for it, too: Open Original Shared Link And although...
  15. I came up with this recipe for summer fruits, but you could easily substitute apples and maybe cranberries (even plumped up dried ones - just soak them in water, juice, or bourbon). Servings: 8 Active Prep Time: 15 minutes Cooking Time: 40 minutes Fruit Filling: 6 cups sliced summer stone fruit: peaches, nectarines, apricots, cherries 1 cup...
  16. I have a recipe, too, for what I call baked marzipan bars. It's definitely gluten and rice free, and pretty easy to make dairy and soy free, too.
  17. Speaking of puffed pancakes (one of my favorites, too) here are a couple more: Apple Puffed Pancake (very easy to make!) Open Original Shared Link Puffed Egg Nog Pancake (which we should be seeing the egg nog very soon!) Open Original Shared Link In both of these recipes, I normally just use Pamela's Ultimate Baking & Pancake mix, but you could...
  18. David, those buttercream frosting recipes were making me drool! That is my absolute favorite icing - I can even eat it without the cake
  19. There's also edible spray on "dyes" by, I think, Wilton that are gluten free. And a lot of times people use fondant, and there's colored gluten free fondant by Wilton, too.
  20. Just to let you know, according to Enterolab there is really only one gene set (I think it's HLA-DQ4) that isn't related to gluten sensitivity or Celiac Disease, and it's linked only with people of Asian or Native American descent. So, if you are not full blooded Asian or Native American, you will have at least one gluten sensitivity gene. But this doesn...
  21. "I printed out the recipe, but I understand that white distilled vinegar has gluten. It's made from grain. Just like Vodka." Also, vodka, and all other distilled alcohol, is safe for Celiacs, too. And vodka, in particular, was originally made from potatoes. Good Russian vodka still is.
  22. For bread, I use the recipe highlighted in this link: Open Original Shared Link The actual recipe is posted at Open Original Shared Link It literally changed the way we thought of gluten free bread in our household. And it's easy to modify. For the gluten free flour mix and bean flour I actually use 1 cup of sweet sorghum flour and 1/2 brown rice...
  23. There are a few reasons, actually why gluten free food is more expensive. One. Yes, corn is becoming expensive to grow. Now that there's been a push for ethanol, which is made from corn, more and more farmers are actually growing their corn, and are even being asked to do this by the government, for fuel and not for food. Corn prices are going up because...
  24. "as an elem. school teacher this could very well be 2 days a week, if not more when you include art classes, etc.! I know finger paints contain gluten and of course kids can and will eat glue off their fingers" There are actually several name brand companies that have gluten free art products. Everything Crayola makes, except for the Crayola Dough,...
  25. Gluten free flour dough doesn't harden through air drying the way regular flour does, and from those ingredients listed, it sounds like they're making a version of play-dough. That's why all the gluten free "play-dough" recipes want them cooked first. You can't really substitute anything, unfortunately, that can easily be mixed in class. I would also...
