A few days is not enough to skew the bloodwork, but children are notoriously fast healers. Leaving gluten out of ones diet for one week can cause enough change to be visible on the biopsy. I would put him back on gluten until the testing is complete to your satisfaction (bloodwork and/or biopsy). If you want to go ahead with testing, do it without delay... -

It's the bean flour you are tasting. I don't use any of Bob's bread mixes or the all purpose flour for that reason. I can only stomach bean flours in something that has another strong flavor to cover it up. Try using it for making brownies or something with spices. I was diagnosed with Osteoporosis at age 25. I took fosamax for about 6 years. I also took Miacalcin for about a year. For that year I was taking both fosamax and miacalcin. I bake 2 leaves a week of the Pamela's mix too. I use a 9x5 glass pan and the paddle attachment on my kitchenaid. I would not use the whisk attachment. I think it would be gummed up too much in the wires and not get mixed enough. I think an 8x4 pan would be too small. I would echo everything Ravenwood glass said. Easy to grab protein sources could be as easy a rolled up lunchmeat, an handful of nuts, some peanut butter on a gluten-free rice cake.
