I don't think I am paranoid about gluten anymore, just cautious. I feed my cat friend gluteny food, but just wash my hands after feeding her. Hmmm, is coughing one of your usual symptoms with a glutening? If it not, then it sounds like a bug in the tummy. I don't think gluten can hide out inside us, although people with diverticulitis might think differently. You might want to write down everything you ate the day before and keep that list. It might lead you to another food intolerance...

Hi, Stylo, If you want to be tested you should not stop eating gluten yet. The antibodies will disappear from your blood stream pretty quickly and then the test won't show anything. For breakfast a couple boiled eggs, and some peanut butter. For lunch I had rice with veggies and beef in an Enjoy Life rice wrap with home made guacamole with boiled eggs in it. You are very welcome Puffee. Lactose iintolerance is common with us because the lactase enzyme that digests milk sugar( lactose) is produced by the villi. The villi lining the small instestine get damaged by the antibodies to gluten, and then no more lactase enzyme. Hi Puffee, It seems like you really just got started on the gluten-free diet. It's not a light switch where you can just throw it and you get better instantly. It takes time. I don't buy bread very often, but I did think Glutino fiber bread was good. It is brown and has multiple grains and bit chewy. What I use far more often is Mission corn tortillas or Enjoy life rice wraps. They are both better if you heat them up a little on the stove or microwave. They bend easier when hot.
