Right, the celiac tests are not perfect 100% accurate answers. Stay on or start the gluten-free diet and eliminate dairy, and soy for 3 months. You need to eliminate wheat, rye, barley and possibly oats also. Your body is the best test device available, much more accurate and reliable than a doctors test tube. Well, the capability of gluten affecting the brain is well documented. Just do a search on gluten ataxia and you will find plenty of info. Celiacs often have problems digesting milk sugar. The tips of the villi are where the lactase enzyme is made, so when they are damaged the lactase is gone. You could eliminate dairy for a few months and see if the bloating recedes. That's the best way to test IMHO. You said you are waiting for blood tests? I assume you mean celiac antibody testing...

I have a reaction to coffee also. Just wanted to mention tea. There are a ton of flavored teas and plain teas you could substitute. But same deal, some of them have gluten in the flavorings. So be careful of them also. Plain tea should be ok. If you have hayfever the flavored teas with flowers etc are usually a problem also. -

That's a good article on refractory sprue F.A. Thanks for posting the link. I felt much better when I fIrst went gluten free. But I didn't feel completely right. Over time I discovered other foods that were bothering me. Eliminating them made a big difference. Soy was a major improvement when I got rid of it. But I also have problems with dairy... -

Hey Bea, One of my most noticeable symptoms of eating casein is not being able to sleep. At I times stayed awake for 3 days straight before being able to sleep a little. Wierd stuff it does. Greens is a gluten-free Belgian beer. A bit pricey but good stuff if you like the heavy beers. I think Whole Foods carries Greens. It is sold by the bottle, not in a 6 pack. There is also a gluten-free beer called Bard's Tale, but I haven't tried that or seen it sold anywhere.

I avoid foods made on shared equipment. It just isn't worth the risk to me. I used to eat Tostitos but when I stopped soy I cut them out. Wylde brand gluten-free pretzels are soy free. Tiny but tasty.
