  1. One of the interesting things about having celiac is how much medical and food info you pick up after a while. An internet search engine can help with a lot of questions, or Wiki is helpful too. It's all a learning process.
  2. You might want to consider an elimination diet after you have been on the gluten-free diet for a few months. Quite a few of us have additional food intolerances beyond gluten. Soy is a big one, dairy, nuts, eggs, fish any of the top 8 food allergens are possible problems. try a search on breakfast ideas, or Snack ideas, or menu ideas. There are several...
  3. Have you confirmed that the vitamin pills are gluten-free? Sometimes they put wheat grass or oat grass in them. It is probably something you are consuming every day that is affecting you. So check everything and if you can't figure it out, start eliminating things. There is also the possibility of additional food intolerances developing over time. Like...
  4. I eat Luigi's Italian Ices from the grocery store. They are gluten-free and have a variety pack of 3 flavors. Not bad at all. Add a little soda to the top and let them thaw a bit and the are a little fancier.
  5. Thanks for pointing this out Bryan. It does always pay to check the ingredients, even if they do put gluten free on the front label. Some companies have no clue it seems.
  6. I've had the Galaxy cheese a few times. It is something like cheese I suppose. You won't ever be fooled by it though, (thinking it is real cheese) that's for sure. It never bothered me digestion wise. Not all their faux cheese are soy free though, so check the ingredients as always.
  7. You really shouldn't assume your reactions are due to gluten. You could also be reacting to other foods as many of us do. Soy, nightshades, dairy, corn, eggs, etc etc etc can all be problems. Check out the top 8 food allergens for a starting list of potential problems.
  8. So what are the ingredients in the cereal and the crisp bread? Can you add those ingredients in isolation to your diet and see if you react to them?
  9. Scott (the board owner) posted this link recently. Open Original Shared Link This is a good reason to stay away from the gluten-free products at the start of the diet. Once she has been on the diet for year or so she should be able to recognize when a food item is bothering her. Greasy stool could be a sign of gall bladder problems. There are...
  10. A healthy diet for her would be anything but wheat, rye, barley, probably oats, and dairy and soy also. Lots of celiacs have or develop additional food intolerances besides gluten (wheat, rye, barley) and some 10 to 15% react to oats also. Kind a fuzzy number there but I don't remember exactly. Other food intolerances we get are soy, nightshades (potatoes...
  11. Hi Deb, After thinking about this more, it seems to me maybe he should be seeing a specialist in celiac disease. There are people like Dr. Fassano around who might be able to help. Sometimes they put people with Crohn's on immune system suppressants to give them time to recover a little. There is also enteral food that people can get that is supposed...
  12. I felt kind of wimpy for a while, but eventually got over most of that. Now I spit in the face of the gluten eaters patouiee!!! (said with an obnoxcious French accent (ala the Brothers Grimm movie).. Ok, just kidding...! No spittin! But really, it gets to be less of an issue after a while. There's lots of things I can't eat besides gluten, and...
  13. Thanks Jeatgar, That Taza chocolate sounds pretty good. I think I'll give it a try.
  14. Hi TH, The reaction people usually mean when they talk about a food allergy is an IgE reaction. IgE is a type of immune cell. There are also IgG, IgA, IgT, immune system reactions. There may be more, I am no expert on it. The skin prick tests they do for allergies can only detect IgE rections. So they won't show anything if you are having an IgA reaction...
  15. I really don't know why people eat soy. I guess because it is easy to grow and cheap. And they put it in about every processed food. If you want to research it yourself, try googling "soy infant thyroid", and read some of the links. Or google "soy rat intestine" , and read some of the research links. I think soy is bad stuff for babies and adults...
  16. Hi Deb, Sorry to hear the hubby is having issues. I'd leave out the dairy myself, jus because so many of us have problems with it. Avocadoes are a good source of protein and healthy fat, so maybe homemade guacamole would help. Hellman's makes one kind of soy free mayo, called canola oil cholesterol free mayo. A couple avocadoes, some lemon juice...
  17. The best test is your own body telling you. Stop eating the top 8 food allergens and nightshades for a few weeks. Then try adding one of them for 3 days straight and see what happens. You don't have to make things any more complicated than that. If you are having symptoms and they clear up when you remove the food, that all the testing you need...
  18. I set off kracklers on the street and sidewalk. A woman stopped with her little girl and watched them pop for a bit so that was cool. In DC most every block has people setting of fireworks that are pretty impressive, almost as big as the commercial ones. People just shoot them off in the middle of the street, usually near an intersection. A cop car drove...
  19. What SSG said. Also, forget about eating out for a few months. You are far better off fixing your own food at home. Don't buy any processed foods at all. Even gluten free ones. Make all your meals from scratch with limited spices, and no spice blends. Do a search on the top 8 food allergens and consider eliminating all of them for a few weeks and...
  20. OK. I am not you, but I'd be sick, sick, sick if I ate what you did. I am adding notes to your list below of why it would be bad for me. Seems like you have a lot of soy in your list of foods. Also some nightshades that would be a no no for me. Maybe you have another food intolerance? Fresh Fruit few and I do mean a few shreds of sharp cheese lettuce...
  21. Hey Harley, There is a really wide range of symptoms that people get when glutened. That's probably why celiac is not diagnosed very fast. If you are in in your first month the diet, it is not surprising to make some mistakes. Or your 2nd or third for that matter! I think it is simplest for people to start out on a very basic diet of whole foods...
  22. I think they usually put out suet in cold weather too, so it doesn't melt in the heat. The darn birds can be picky though. I feed them in the winter and early spring, but once it gets to be warm weather they are not that interested. Or maybe they just don't like the Betty Crocker cake mix muffins for some reason. Or maybe they just don't like the ones...
  23. Gee, a whole series of excellent questions there. Gluten intolerance vs celiac? Well, some people don't test positive on the blood antibodies, or show villous atrophy, but are still sick when thwy eat gluten. One term for that is NCGI no-celiac gluten intolerance. Some people don't have much in the way of digestion symptoms, but have other symptoms...
  24. Congrats on your book Sandsurfgirl! That's great, it really is nice to be able to get things done eh? I guess for me it is about being able to think about something other than art now. Not that I don't love art, but I can think about it a bit less obsessively. I still love to experiment with materials and such, and try new ways of making art. Even...
  25. Good point Tina B. Welcome to the board too!
