Ali, I understand your predicament. I'm not sure if my bloodwork would ever show Celiac, and I'm waiting to find out what genes I carry. It definitely is possible to become hyper sensitive to gluten after removing it from your diet. The longer I go without it, the worse it is when I come in contact with it. Just throwing ideas out, that also sounds like it could be food poisoning??? Either way, I hope you are feeling better!! -
I noticed that when I get glutened, I too, have a hard time with coffee. I think the reason for me is that the gluten makes my head throb and I stay naseaous for about a day or so. On the outer package, just the directions for cooking it. On the inside is a small leaflet with recipes. Would he settle for running a genetic test on you? Thankfully this was the option my GI came up with and my bloodwork was negative. He just really wants to know if I have Celiac or not to monitor me down the road. I told him I really didn't need a diagnosis, and I wasn't going to eat gluten to have it. So, he suggested the DNA test and that was good enough... -

I COMPLETELY agree with you. I think that food should be your next highest bill to housing. It can single handedly control how much you go to the doctor, how you sleep, how productive you are, the list goes on. I don't buy much processed food either, but I didn't before I went gluten-free. The last time I bought puffins, they said wheat free. I got sick. If it's processed and doesn't say gluten free, definitely check the label. Even if it says gluten free, but ESPECIALLY if it doesn't. Personally, I swore off Puffins. The ones I ate had oats/oat flour in them. I'm sure they were contaminated. Sorry to rain on your day...

The only brand that I have actually seen is Bob's Red Mill. There's probably others, but I am not sure. As the previous poster mentioned, the issue with oats is the contamination. However, some people with Celiac simply cannot tolerate oats; gluten-free or not. -

There are some breakfast cereals that are high in fiber, but you have to read every label. I have found one made of flax that's pretty high in fiber. I've also had some made of amaranth, buckwheat and/or quinoa. I find the rice cereals do the same thing with me. I'm pretty sure it was my trigger, too. I could pretty much eat whatever garbage I wanted to and be fine. After my son was born, slowly my body turned on me.
