It's possible...but I've eaten Costco chicken for 20 years without issues. Their ingredients have never indicated any gluten, but accidents can happen. Perhaps there was a mistake made in their preparation area? -

Have you been keeping a food diary to record your reaction to various foods. A low histamine diet helps many people, and this article may be helpful, but above all, let your doctors know exactly what is going. -

I am concerned that you said you are spitting up blood… This is not a typical symptoms of celiac disease. Be sure to consult your doctor about this, as it could be something else separate from your celiac disease. -
I would also be very cautious about having an endoscopy done on a 4 year old, especially if you have a family history of reactions to anesthesia. If she's had a positive tTg test for celiac disease AND her symptoms have gone away after going gluten-free, the odds are very high that she has celiac disease, so the endoscopy may not be necessary. Your symptoms definitely sound like they could come from untreated celiac disease, and if you had a high DGP blood test for celiac disease, and a brother with celiac disease, then the likelihood you have it is even higher--a recent Mayo Clinic study found 44% of first degree relative of celiacs also have it. I don't believe that your son would necessarily have issues with dairy simply because you have celiac disease, but it might be possible. He has a ~44% chance of also having celiac disease, according to a recent Mayo Clinic study, so you need to be very careful when you first start feeding him gluten, but to me it seems like trying the dairy formula should... -

It's not semantics, if you don't get your antibody levels checked you won't know if your autoimmune reaction is ongoing. A treatment that might mask the symptoms (my doctor gave me many of these) does not mean you are disease-free and that you won't suffer future consequences of not treating the root cause of it--in this case by going on a gluten-free diet...

I'm sure you saw this, but in that article: So the odds are much in favor of you having celiac disease, and you could do more tests to determine this. The normal next step would be an endoscopy for celiac disease. Another approach would be trying the gluten-free diet for a few months to see if it helps with your symptoms, but then you might... -

In general going by such a "gut test" is not recommended at all. Symptoms in celiacs can change over time, and many celiacs have no little or no symptoms. The only way to check out be using a celiac disease blood panel to see if the autoimmune reaction is ongoing:
