  1. So true. If it's possible to grow yourself, that would be a good possibility. Can you give names of plants that have helped you?
  2. Sometimes it is just better to feign illness and stay home. If you go you will get sick, so it's not really all that made up.
  3. If you are having villi problems, you are probably reacting to some gluten contamination from somewhere.
  4. I explain that "gluten free" actually means "gluten lite" and some of us can't eat it. That gets the message across.
  5. I act like a crazy person, refusing to shake hands and hug if someone has been eating. I also jump up and leave if there is too much gluten around. Last event I went to was a wedding. I was sure I looked absolutely crazy. When I next communicated with the bride she apologized for not being more sensitive about the gluten crumbs, that she hadn't realized...
  6. I had always been iron deficient and took iron supplements. After going gluten free my iron levels were high so I stopped the supplements. I think that avoiding gluten may be more important than taking supplements when it comes to getting our vitamin levels where they should be.

  8. My son gets reflux two days after eating the problem item. It takes me a day to notice most symptoms. I think that it is different for everyone and for each symptom, and varies depending on how much cc you get. Isn't it fun how hard this is to figure out!
  9. I can't even find any dried beans that are O.K. I have started to grow my own. You are probably less sensitive than I am. Try them.
  10. Glad you are improving. If you aren't already, keep a food journal. Write down what you eat and how you feel. It makes it easier to figure things out. Keep track of brand names too.
  11. Some of us, super sensitive celiacs, react to lower levels of gluten than the rest. There is a section on this forum about that. You could try a diet of meat and produce for a week or so to see if that helps.

  13. I sort my food. I have found wheat grains in millet and beans so they are not safe for a super sensitive. Many beans are processed together with wheat. I haven't been able to find a safe bean source which I can tolerate.
  14. Super sensitive means that you react to small amounts of gluten cc and need to avoid processed foods and probably grains too due to shared harvesting and processing equipment. You can also be super sensitive to casein etc.
  15. I am a super sensitive celiac. I had to go on a whole foods diet to eliminate all symptoms.

  21. If I were you, I would consider super sensitivity to gluten cc as a possibility. You can read more about it in that section.

  23. This is a video of a presentation by Heidi Schwarz a neurologist, who thinks that it is an autoimmune reaction, and not nutritional deficiencies.
  24. I'm still looking for safe beans too. They could be the source of your problem, especially if your doctor thinks that you might be super sensitive. One thing that you could try is sorting them carefully. I have found wheat particles in beans before. Then wash carefully before eating. If that improves things, I think you found the source of your problems...
