Blood testing can sometimes be false-negatives, so if you're willing hold out and eat gluten a while longer, a biopsy would tell you whether or not there's damage to your villi.   8. 2 1/2 months is still pretty early days. It could be your gut is still healing from the gluten damage, and your system is all wonky at the moment. It might be a little early to do a full elimination diet, especially if leaky gut is making you react to things for no real reason. If in a few months you're still having problems, then it's time to look for intolerances...
  9. If it says wheat... I wouldn't trust it, even if it does say it's gluten free. Anything where the gluten's been "removed" kind of freaks me out. But if you don't end up getting ccd, then maybe you don't have a problem with it. Might be worth contacting the company to see what their testing standards are.

  15. I always know it's done when all the starch rises to the top. A suggestion, no matter what kind of pasta you're using: undercook it a little (al dente), rinse it it cold water, then put it in with whatever sauce or such your having it with and let it heat back up in it. That seems to help get the starch off and it holds together a bit better.
