  3. Some of us are a little close to this topic, and it's hard sometimes to read the meaning, not just our own emotions into things. It sounds to me that you are working with your son to help him come to terms with his disease...it's just hard because he's a teenager and your mom.   4. I LOVE my bread machine. It's a Cuisinart, and it rocks! It has a gluten free setting, but I've never used it. I use the regular setting to make Pamela's yummy bread. Otherwise, I purchase Udi's frozen loaves (they are AMAZING!) for sandwiches, and I love Brazilian cheese bread for dinner rolls. But if you do want bread, I'd recommend buying a machine that...
  5. I'm glad you've decided to let it go. I see so many angles to this, and believe me -- I used to be a state worker, I understand your frustration! It seems some are catered to and others aren't. But winning ISN'T everything. And in this fight, you'd only make it worse for yourself, and quite honestly, other celiacs. I thank every restaurant I'm in that offers...

    It does get better! I swear it does. Frustrating? Absolutely. But over time, it does improve. I've been gluten free for 6 months, and outside of when I get glutened, like I did this weekend, I feel great. You'll just have to be careful, wash your hands regularly, and focus on what life is like off gluten. Believe me -- this is one of the easier diseases...

  8. I agree, Gemini. For just eating bread, give me Pamela's, any day. I love that darn stuff. A little honey butter...:slobbers: But for sandwiches...which never were a big deal to me, but they are now!...this is good stuff. And it doesn't get squishy or nasty by the end of the day. Yum.
  9. Just another thought on this: maybe see if you can arrange for him to visit with some kids who are chronically ill in the hospital, or maybe help in a local food initiative for poor families. We support a little girl in Moldova (Eastern Europe), and I had to explain to my very spoiled kids what it means to not have food. Maybe get him involved in fundraising...
  10. Others can help you on the legal aspect better on this than me, but I would fight this as though my life depended on it. What school has the right to make a decision because it might "disrupt" others? What about your kid?! Shouldn't the best interest of the child be the guiding factor? Definitely the closest thing I've eaten to real bread, and their blueberry muffins are to die for. As soon as I get paid, I'm going over to clean out their supply! $4.99/loaf too. It's yummy!   12. I take sweet potatoes, corn chips, cheese, salad, carrots, fruit...let's see. Two eggs, with a very soft cheese -- like laughing cow wedges, stir the eggs and microwave in a mug for two minutes. Then mix 1t yogurt, 1t dijonaise (dijon mustard mixed with mayo -- we can buy it by name in the US) and a squirt of lemon juice...heaven. You can really play with...
  13. I have to disagree with ahoursesoul on this one...reason being...kids can be quite cruel. And now that they know about her issue, someone might try to sabotage her, for the heck of it. Let's face it, this is an easy one to mess with, and it sounds bizarre when you haven't had much experience with it. Not to mention: your daughter had a right to keep this...
  14. It works great as a mix-in. I had the same reaction as Nor_TX when I first tried it. Horrid on potatoes... blech. But it makes an excellent chip dip or mix in for a recipe. No idea what to tell you about Soy, as I don't have any issues with it so far.
  15. Hm...I eat a gluten free pizza here at a local pizza joint, and they bake them in the same ovens. They are made on separate aluminum liners, and they keep a special cutter just for gluten free, but other than that...that's about the only concession. I haven't had any issues, and according to them, they have a number of celiacs that eat there. So I don't know...

I have serious GI issues when I eat gluten, and now that he's seen the difference (I got glutened a few months back), he's seen (and smelled! ) the light!   19. I eat Bob Red Mill's Gluten Free Oats without issue. I cannot define how sensitive I am, but they've worked well for me.
  20. It seems he is not as supportive as you think he is. You don't have to prove it to anyone. You just have to do what you need to to keep yourself healthy. If he or your friends don't believe you...are these the kinds of folks you want around you? I'm not officially diagnosed, but did the diet test to figure out what my issues are.   21. Ah, yes, made the Doritos mistake 3 1/2 weeks ago -- took me this long paying for it for my body to heal. Ugh. Avoid the Nacho doritos!! They have many other flavors you can have, though, and some cheetos are gluten-free too.
  22. Just make sure they clean the slicer before cutting up your meat! I've gotten into Wegman's packaged deli meat as a quick snack. It's marked gluten free.
  23. WHEN I haven't accidentally glutened myself, I feel GREAT! Really, really good, with very few GI issues. Unfortunately, it takes me about three weeks to get over being glutened. But I really do feel 100% better...I guess I'm lucky that way.

When someone asks me to lunch, I either call ahead, or I have a number of restaurants that I know can accommodate me...but it is always a risk.
