  1. Thanks Peter!! I'm so happy I found this because I'm pretty sure my 5 year old son has celiac. We are getting him tested next week with the blood panel. I was worried about giving him a good bread for PB and J sandwiches. Why do you have to freeze and not refrigerate it?
  2. I wish I had that problem. LOL I'm still hungry a lot after 2 months into the diet. I would just make sure that you are eating healthy foods and that you are eating enough calories during the day and not worry about it. Good thing you have had so much relief!
  3. Hey you! You made it here, if this is who I think it is. I emailed you some more info. Heather
  4. You can buy gluten free waffles at Trader Joe's, Sprouts and Whole Foods. Bananas and a bag of nuts, apples and a hard boiled egg. Make gluten free pancakes on the weekend and microwave for 30 seconds. Eat them while you get ready. You can make scrambled eggs ahead of time and microwave too.
  5. Sounds like you may have been glutened. It can really sneak in there especially when you are eating out. The wonderful ER doc who diagnosed me with celiac also gave me a great tip about my chronic sinus infections. He told me as soon as I get sinus pressure I need to take the blue box of Mucinex. On the box it says it's for chest congestion, but it totally...
  6. Oh yeah disney is way on top of the gluten free. I haven't been to Florida but I live near Disneyland and we got there a lot with our passes. At City Hall they gave me a many page handout of all the gluten free stuff in the park. At restaurants I still talk to the manager and some of them have a special celiac menu they bring out for me. There are gluten...
  7. Are you kidding me? A science teacher and she thinks she knows about medicine?????? What an idiot. Yeah, because she had to do what, get a bachelor's in some sort of science and take a test for her credential? Last time I checked that doesn't make you a doctor. I hope your mom doesn't listen to her.
  8. I went to the ER once doubled over in severe pain. The curtain on my bed was open a bit and I could see the doctor across the way looking at my xrays. It was quiet in there so I knew they were mine. He said "Oh my God!!" and called the nurses over. They were all pointing at my x ray and one nurse said "Whoa!" I was freaking out thinking I had cancer or something...
  9. I went to a doctor who is somewhat of an expert on celiac and he said that I will have to consider dehydration one of my number one battles. I am on about week 9 of I the diet and have only been feeling a lot better since I took the dehydration very seriously. I have to front load my day with water and Gatorade mixed half and half with breakfast. If I don...
  10. I just posted a new thread about a bread I made last night. It's Gluten Free Pantry French Bread and Pizza crust mix. It really works like a nice white bread. I had a sandwich today and it didn't fall apart. I love it!!!
  11. I just baked a loaf of Gluten Free Pantry French bread and Pizza Crust mix and it is amazing. I used the oven recipe not the bread machine method. It calls for either milk or water and I made it with water. The recipe includes vinegar, which surprised me. It holds together well. Tastes great and doesn't crumble. It got a nice high rise on it and I am...
  12. I'm glad you are going to keep trying. I wish so badly somebody would have tried to figure out what was wrong with me in my early 20's but the docs could care less and all they said was, I'm not sure what's wrong with you. YOu have a sensitive stomache. UGH. I could not eat any complicated foods like gluten free breads and such for about 5 weeks. Even...
  13. Yep I've had that too. I've had undiagnosed celiac for my whole life and got diagnosed recently at age 40. I've had all sorts of different phases with it over my lifetime, but the C has been predominant in much of my life. I saw in your siggy that you came up positive for RAST test allergy to wheat, barley and rye, so does that mean that you have to...
  14. good for you! What an #@*(^%$%$ jerk! Like anybody would choose to do this on purpose!! Yes, I just love having to ask 20 questions every time I eat out and make a spectacle of myself at the dinner table. I've done this because it's fun. Right! Arrrgh
  15. I wanted to add, don't be afraid to embellish a little. They don't need to know your exact medical history. When my friend was making light of it I told her "Now I have to face the possibility of testing for other diseases like cancer because untreated celiac causes that and much more." That shut her up quickly.
  16. I'm so sorry for you! Yes this is harassment. I think that they are awful people for acting like third grade bullies, but... it's now time for you take control of the situation and learn some assertiveness so this doesn't happen again. I am direct and a no B.S. type of person, and I can tell you that would not happen to me in any situation because people...
  17. yep I caught a cold right after I started to feel better and I was so depressed about it. The wonderful part was that before being gluten free every cold turned into a major 4 week ordeal, sinus infections, bronchitis, antibiotics and just a mess. This cold went away in the normal few days and was a normal cold. Now I have a head cold/sinus infection...
  18. I'm confused. Your siggy says you had a positive biopsy. So now are you saying your biopsy wasn't positive? Are you doubting celiac or do you think you have something in addition to celiac?
  19. Yep, I agree. Blunted villi mean celiac disease. There are so many other symptoms not GI related. Many on here have had terrible irreversible damage to their bodies because of undiagnosed celiac. Your GI is wrong, sorry. You must stop the autoimmune reaction now by being totally gluten free and never look back. He isn't the one who will have to live with...
  20. There is a withdrawal period and it's normal. I didn't feel better until about 6 weeks into the diet. Dehydration is a huge problem for celiacs so make sure you are drinking lots of water. I also drink Gatorade because the natural electrolytes make me sick but you can try natural electrolytes from a health food store. You might ask your doc to test...
  21. Yeah I lost my best friend when I got diagnosed a couple of months ago. We met at a mom's group at church. She has always been someone I looked up to and thought I could trust wholeheartedly. I called her crying on her voicemail and got no phone call. Then after calling her 2 more times I got an email saying that she was praying for me, but then in the...
  22. My son's ped was so knowledgable when I told her I have celiac and would like to get him tested. She has gone to lots of celiac conferences and likes to use blood tests as a diagnosis and only refers for a biopsy if necessary. She also drew a triangle on a paper and a line across it near the top. She said the top portion represents those who are diagnosed...
  23. That's great Janie! My ped is pretty knowledgable too so far. I think I'll post her on a thread too.
  24. Here's an even better tip. I don't want to make the whole batch and eat the whole batch sometimes so I just make one serving. I've tried it with the chocolate chip cookie and brownie. The brownie is more gooey but the cookie is the right texture. Take about 3 tablespoons of the mix and half teaspoon of melted butter or margarine. Add a few spoons of water...
