  1. it's really not that difficult to avoid corn and legumes at all. I don't particularly like corn at all, so I just don't eat it. I don't use corn meal either in any baking or cooking. I just don't like it. If you're allergic, it shouldn't be any more difficult to avoid it now that you know you have Celiac than before when you didn't know. The best...
  2. DH would be evident with a rash. All over itchiness could be a symptom of other allergies, or a neurological reaction to gluten.
  3. "issues" are not always blatantly obvious though. Not everyone gets a painful gut reaction to eating gluten, sometimes it's just other unidentifiable malaise. Which is what makes this disease so frustrating are difficult to pin down.
  4. the other common culprits would be dairy, soy, nuts, and legumes. Have you tried elimination diets for each of those to rule out other food intolerances?
  5. yep, if it's not in your teeth, it's in your digestive tract somewhere. Did you have an endoscopy? Did they notice any inflammation or erosion?
  6. Yes, Enjoy Life are now making chocolate bars as well as chocolate chips. I think the bars are so far only available in the US. My local (Whitby, ON) health store has been unable to get the bars yet.
  7. I've learned a lot about nutrition and the effects of foods on the body (not just gluten). There really are so many foods that we *can* eat, and I've discovered so many that I don't miss gluteny foods at all. I cannot ever imagine ever wanting to poison myself like that ever again! Whole and natural is the way to go!
  8. Where do you live? Brands and ingredients may vary from country to country, and even from state/province within a country. It may help us to help you if we knew where you live As for hand/body lotions, I use Watkins most often. I also have a few Watkins brand lip balms (addicted to lip balms I am!) Shampoos and conditioners I use Pantene, and...
  9. once you're on a gluten free diet for a couple of weeks, any diagnostic tests to find Celiac disease are going to be negative. You MUST have gluten in your system in order to properly diagnose Celiac disease. It just boggles me why any adequately trained GI would recommend you start the gluten free diet before testing, that's absolutely rediculous! Do...

I've recently found this site to be rather yummy Open Original Shared Link She's not a diagnosed Celiac, but has been gluten free for a few years.
  11. eat a whole, natural foods diet. Eliminate if possible manufactured and processed foods. Stick with the gluten free that Mother Nature made. Properly balanced frequent meals with fats, proteins and controlled carbs will increase your energy levels 10-fold. Whereas the extremely high carb manufactured gluten free foods will cause sugar spikes and crashes...
  12. I wish I could afford a stand mixer. I used to have one. My ex-husband somehow got custody after the divorce I have arthritis in my hands, so mixing and kneading bread by hand is pretty much impossible, and why I haven't attempted it yet. I sometimes can't even manage to scramble my eggs in the morning!
  13. I thought it was 3 tbsp of cocoa powder + 1 tbsp of fat (either butter or coconut oil, or cocoa butter) for the sub instead of baker's chocolate? I think the use of a fat instead of water would make for a more moist outcome. Just my opinion of course based on what I've learned, and because I'm not afraid of fat
  14. when tweaking recipes, it's best to change only one thing at a time so that you know what it is that perfects it. If you change both the vinegar and the flour mix, and you get a loaf that you like, you won't know which change it was that made it better. (same principle as computer and car maintenance, fix one thing at a time, so you know which fix fixed...
  15. there are a lot more treatments now to reduce pain and bone deformity caused by RA than there was back then.
  16. I just Googled "gluten free biscotti" and got about 1,040,000 results
  17. Get an ice pack for your lunch bag and you can take gluten free lunch meats, wrap some around a cheese stick and you don't need to worry about gluten-free bread going yucky A great "ploughman's lunch" is easy. Hardboiled egg, sliced meats, cheese, veggies, fruits...
  18. unfortunately it is not at all unusual to develop more autoimmune diseases once one has been triggered. If your RF levels are high, it is very likely that you have rheumatoid arthritis as well as Celiac. You probably are "gluten free enough", there's just not much we can do about being susceptible to autoimmune diseases. I'm waiting on test results...
  19. you can also buy packages of whole seeds, nuts, beans, or gluten free grains and grind/mill them at home in a spice mill or food processor. This can save you quite a bit of money. Almond flour can be as much as $15 per pound, but a bulk bag of almonds at Costco is a lot less, and then you can grind them at home. With nuts I usually end up with more of...
  20. I'll second the suggestion to look for studies on Celiacs developing other auto-immune diseases in general, and there may be stats within those studies on each subsequent/concurrent auto-immune disease. Generally speaking, I believe it is commonly known that if someone has one auto-immune, they're prone to get others as well.
  21. My fave gluten free flour is coconut flour. It's a bit spendy, but it makes awesome cupcakes and I even managed a pie crust with it I've also used (certified gluten free) oat flour with great success as well. There are sooooo many options for gluten free baking, experiment with more than just the usual rice or potato flours One way to keep your...

    ARCHIVED Back Pain

Wow, I hope someone pays attention to your complaint re: the therapist Coolclimates! That's just not right! Looks like the OP hasn't been back to tell us how they're doing with their back pain, I wonder what happened? I was just yesterday told I have severe OA in my spine and "morbid disk degeneration". I have had on-going back pain for several years...
  24. Hyperthyroid, rather than hypothyroid, can cause you too constantly feel hungry, and contrary to what most doctors and people think, it is possible to gain weight and be hyper thyroid! I know, because I've BTDT! I had Grave's Disease (currently in remission) and at first I lost a lot of weight, but then I gained it all back plus! after my muscles started...
  25. I would most definitely suggest that you see the doctor asap! I can't imagine how difficult it is for you on base to try to eat gluten free, especially if you're eating in the community mess hall, where everything touches everything in the kitchen.
