if you Google "gluten free shortbread" you'll get over 5 million results! I haven't tried making any since I went gluten-free, but I'm sure there are lots of very good recipes out there.

ARCHIVED What Is A Healthy Oil To Add To Cake Recipes?
Reba32 replied to Michelle1234's topic in Gluten-Free Recipes & Cooking Tips
remember too that olive oil can go "off" quite quickly, especially if it got too warm in the cupboard, or if it's past its "best by" date. This will give anything cooked with it an odd taste. Check the date *every* time you use your olive oil! Coconut oil is good for baking too. Depending which brand you get, it may or may not add a coconutty flavour... -
ARCHIVED Nausea That Resolves With Eating Protein
Reba32 replied to pricklypear1971's topic in Related Issues & Disorders
fighting low blood sugar with sugar isn't the answer, that's for sure! Try for more high fat, moderate protein and low GL (glycemic load) fruits and veggies (think paleo diet). See if that helps. Eat 5 or 6 smaller meals per day, rather than 3 big meals. This will help to keep your blood glucose levels at an even keel, rather than spiking and crashing... -
I've had psoriasis all my life, (I'm 44) and I've been gluten free for nearly 2 years now (since Dec. '09). It hasn't stopped the psoriasis at all. But I'm also in the process of testing for additional auto-immune diseases, (psoriasis *is* auto-immune btw!) which could be flaring and aggravating the psoriasis further. Stress can cause psoriasis to...

ARCHIVED What Am I Eating?!?
Reba32 replied to glutenfreemamax2's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
No, most MacDonald's fries are definitely NOT gluten free. You'd have to check with the specific restaurant where you go them, but most do not have dedicated friers, and will share with the breaded chicken and fish. Fries in general are not safe anywhere, unless the restaurant has a dedicated frier, or is entirely gluten free. -
Could even be additional auto-immune disease(s). If you do get to a doctor, ask about testing for AIs. This can get incredibly frustrating and expensive though, because AIs are difficult to pin down.

ARCHIVED gluten-free Oat Flour Flax Bread
Reba32 posted a topic in Gluten-Free Recipes & Cooking Tips
Ok, inspired by This topic here originally posted by MerrillC1977 I did some tweaking and came up with a very lovely "artisan" type bread that I'm quite proud of This is great if you can tolerate oats, which have not been a problem for me. (I've been gluten-free since Dec. 2009) I bought Bob's Red Mill gluten-free oats, and ground them myself in a coffee... -
Homemade Bread And Bread Machine
Reba32 replied to chrissyinnj's topic in Gluten-Free Recipes & Cooking Tips
I made a loaf of bread that was about half n half gluten-free white all purpose flour and flax meal. It lasted quite nicely about a week on the counter wrapped in a paper towel and sealed in a plastic zip lock bag. I don't have a bread machine, I mixed in a stand mixer and baked in the oven. -

magnesium supplements may help. Magnesium is a natural laxative and muscle relaxant. Try a low dose. -

ARCHIVED The Specific Carbohydrate Diet
Reba32 replied to glutengirl42's topic in Related Issues & Disorders
I did lose weight on Atkins, and continue following the plan in "life time maintenance". It is a life style change, not just a weight loss regimen. It took me a while, but I lost about 30 pounds. Of course I had the regular Celiac hurdles of malnutrition and malabsorption to contend with. I avoided the Atkins manufactured foods, because they are not gluten... -
ARCHIVED Nutrition, Eat Enough, High Proten - Healthy?
Reba32 replied to celiacSuzie's topic in Related Issues & Disorders
please note the difference between ketosis and ketoacidosis, they are two entirely different things, and ketosis is *not* a bad thing in the slightest! It just means your body is using fat as fuel instead of carbohydrates. If your body is using fat as a fuel, it is NOT STORING it! Open Original Shared Link If you're worried that you're getting... -
ARCHIVED Substituting Ingredients
Reba32 replied to chrissyinnj's topic in Gluten-Free Recipes & Cooking Tips
I've successfully made quite a few things just by substituting gluten free ingredients where the original recipe is a gluten flour. Sometimes a recipe will need tweaking, other times all it will need is some additional water because gluten free flours are more thirsty than wheat flour. I tend to lean toward lower carb content as well as gluten free... -
everyone shrinks, regardless of degenerative disk disease or not. Starting at around age 30, and progressively from there. In some people it is more noticeable than others. I've shrunk about half an inch, I have degenerative disk disease.

ARCHIVED What Are The "health Issues" Of The gluten-free Diet?
Reba32 replied to chrissyinnj's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
most vegetables and lower carb fruits have MORE fiber than a serving of typical whole wheat pasta or bread. It bugs the crap out of me that nutritionists and doctors can't figure this out, and keep telling patients that the best options for fiber are grains! It's just crazy and not at all true! Half an avocado has more fiber in it than a serving of whole... -
ARCHIVED Tired Of Having Frequent "colds"
Reba32 replied to Rebekka's topic in Coping with Celiac Disease
and the malabsorption and nutrient deficiencies can be remedied by eating entirely gluten free and a healthful balanced diet, which includes healthy fats, proteins and moderate carbohydrates. It will take a while for the gut to heal yes, but as it heals the body will absorb more and more nutrients and vitamins from the foods. Avoid manufactured packaged... -
ARCHIVED Why Am I So Tired After Eating?
Reba32 replied to birdie22's topic in Coping with Celiac Disease
it all is rather high in carbohydrates, with not a lot of protein, and very little fat. Your body NEEDS fat and proteins in order to function properly. Try getting rid of about half the refined and starchy carbs, and replace with healthy fats and proteins, and full fat cheeses rather than low fat. -
ARCHIVED Had Weetabix But Haven't Had A Reaction?
Reba32 replied to speedy2056's topic in Coping with Celiac Disease
having both the hamburger bun and the Wheetabix so close together you may not have had a "noticeable" reaction to the Wheetabix because the bun was still raging through your system. If you want to truly test intolerance, wait a few days between re-introduction of any possible offending food. -
ARCHIVED Tired Of Having Frequent "colds"
Reba32 replied to Rebekka's topic in Coping with Celiac Disease
you don't want to "boost" your immune system though, if you have an auto-immune disease. Taking herbs like echinacea and the like, can actually make you feel worse and make an already over active immune system even moreso. Having a healthy diet, proper sleep patterns, and washing your hands regularly is really the best you can do to ward of colds and... -

ARCHIVED Going Back To Eating Gluten For My Endoscopy?
Reba32 replied to CourtneyLee's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I only did about 7 weeks, and the damage was visible on the scope, not just confirmed by biopsy. Prior to the 7 weeks challenge, I had been pretty much gluten free for just over a year. For me, the damage was immediate and severe. -
ARCHIVED Struggling With NHS Protocols (UK)
Reba32 replied to CR5442's topic in Coping with Celiac Disease
talk to your doctor about how much more it's going to cost the NHS to treat your symptoms for the rest of your life, rather than getting you a proper diagnosis and treating you correctly for Celiac now! Something I wish the doctors here in Canada would get thru their thick skulls as well! SOOOOOOOOOO many times the symptoms are treated, just throw pills... -
ARCHIVED Tired Of Having Frequent "colds"
Reba32 replied to Rebekka's topic in Coping with Celiac Disease
actually, Celiac is an auto-immune disease, which means your immune system is OVER active, not low functioning! This doesn't mean of course that you're safe from cold and flu viruses, or even more susceptible. I'd hazard a guess that you've just come into contact with a lot of them lately. To ward them off, wash your hands often after/when you're out... -
