  1. if you Google "gluten free shortbread" you'll get over 5 million results! I haven't tried making any since I went gluten-free, but I'm sure there are lots of very good recipes out there.
  2. remember too that olive oil can go "off" quite quickly, especially if it got too warm in the cupboard, or if it's past its "best by" date. This will give anything cooked with it an odd taste. Check the date *every* time you use your olive oil! Coconut oil is good for baking too. Depending which brand you get, it may or may not add a coconutty flavour...
  3. fighting low blood sugar with sugar isn't the answer, that's for sure! Try for more high fat, moderate protein and low GL (glycemic load) fruits and veggies (think paleo diet). See if that helps. Eat 5 or 6 smaller meals per day, rather than 3 big meals. This will help to keep your blood glucose levels at an even keel, rather than spiking and crashing...

  5. No, most MacDonald's fries are definitely NOT gluten free. You'd have to check with the specific restaurant where you go them, but most do not have dedicated friers, and will share with the breaded chicken and fish. Fries in general are not safe anywhere, unless the restaurant has a dedicated frier, or is entirely gluten free.

  8. I made a loaf of bread that was about half n half gluten-free white all purpose flour and flax meal. It lasted quite nicely about a week on the counter wrapped in a paper towel and sealed in a plastic zip lock bag. I don't have a bread machine, I mixed in a stand mixer and baked in the oven.

  12. I've successfully made quite a few things just by substituting gluten free ingredients where the original recipe is a gluten flour. Sometimes a recipe will need tweaking, other times all it will need is some additional water because gluten free flours are more thirsty than wheat flour.     everyone shrinks, regardless of degenerative disk disease or not. Starting at around age 30, and progressively from there. In some people it is more noticeable than others. I've shrunk about half an inch, I have degenerative disk disease.

Try getting rid of about half the refined and starchy carbs, and replace with healthy fats and proteins, and full fat cheeses rather than low fat.

  21. I only did about 7 weeks, and the damage was visible on the scope, not just confirmed by biopsy. Prior to the 7 weeks challenge, I had been pretty much gluten free for just over a year. For me, the damage was immediate and severe.
