it's really not that difficult to avoid corn and legumes at all. I don't particularly like corn at all, so I just don't eat it. I don't use corn meal either in any baking or cooking. DH would be evident with a rash. All over itchiness could be a symptom of other allergies, or a neurological reaction to gluten. -

"issues" are not always blatantly obvious though. Not everyone gets a painful gut reaction to eating gluten, sometimes it's just other unidentifiable malaise. Which is what makes this disease so frustrating are difficult to pin down. -

the other common culprits would be dairy, soy, nuts, and legumes. Have you tried elimination diets for each of those to rule out other food intolerances? -
yep, if it's not in your teeth, it's in your digestive tract somewhere. Did you have an endoscopy? Did they notice any inflammation or erosion?

Yes, Enjoy Life are now making chocolate bars as well as chocolate chips. I think the bars are so far only available in the US. My local (Whitby, ON) health store has been unable to get the bars yet. -

I've learned a lot about nutrition and the effects of foods on the body (not just gluten). There really are so many foods that we *can* eat, and I've discovered so many that I don't miss gluteny foods at all. I cannot ever imagine ever wanting to poison myself like that ever again! Whole and natural is the way to go! -

once you're on a gluten free diet for a couple of weeks, any diagnostic tests to find Celiac disease are going to be negative. You MUST have gluten in your system in order to properly diagnose Celiac disease. I wish I could afford a stand mixer. I used to have one. My ex-husband somehow got custody after the divorce I have arthritis in my hands, so mixing and kneading bread by hand is pretty much impossible, and why I haven't attempted it yet. unfortunately it is not at all unusual to develop more autoimmune diseases once one has been triggered. If your RF levels are high, it is very likely that you have rheumatoid arthritis as well as Celiac. You probably are "gluten free enough", there's just not much we can do about being susceptible to autoimmune diseases. I'm waiting on test results...

you can also buy packages of whole seeds, nuts, beans, or gluten free grains and grind/mill them at home in a spice mill or food processor. This can save you quite a bit of money. I'll second the suggestion to look for studies on Celiacs developing other auto-immune diseases in general, and there may be stats within those studies on each subsequent/concurrent auto-immune disease. Generally speaking, I believe it is commonly known that if someone has one auto-immune, they're prone to get others as well. -

My fave gluten free flour is coconut flour. It's a bit spendy, but it makes awesome cupcakes and I even managed a pie crust with it I've also used (certified gluten free) oat flour with great success as well. I would most definitely suggest that you see the doctor asap! I can't imagine how difficult it is for you on base to try to eat gluten free, especially if you're eating in the community mess hall, where everything touches everything in the kitchen.
