  1. If it were me, I would want to be sure I get an accurate biopsy result and start eating a little gluten everyday. The superficial damage can heal quickly. Sure, you might have enough damage to get an accurate result. Make sure he plans to take at least 6 biopsies to increase the chances that he finds some damage.     I agree. I think there are a few gluten-free bakeries in the Denver area - just google them. I hadn't heard that the company that owns Udi's bread was trying to change the name. I doubt it has anything to do with Rudis. Udis bread was sold a few years ago. The restaurants, owned by someone different than the bread, are not doing much gluten-free...

  7. For people reading this, a clarification - SOY is not gluten. Soy does not contain gluten. The OP might have a separate issue with soy.

  20. For a Celiac - a crumb is bad. A little gluten is as bad as a lot of gluten in terms of damage. Not sure if it makes any difference in your case. You might want to see if there are any ADHD forums or websites that explain the gluten-free diet for treatment of ADHD. Maybe they could answer that?

  24. Maybe the mild pain is from the hysterectomy? Maybe you should get that re- checked? I don't know your history but, often , when the Celiac damage is healed, people find they can add a little dairy or other foods they had problems with before. Maybe skip the restaurants for a while? A plate of nachos at a Mexican place may not be gluten free....
  25. Drywall or gypsum board is mainly gypsum ( a ground up rock) and glue. There is a slight chance 1 brand might use a small amount of wheat starch in it but it's not likely nor plentiful. I wouldn't eat it or anything with dust on it - but I doubt most people would. I think I would worry more about getting the wall finished and kicking the insurance companies...
