  1. Welcome, Alicia! I don't know if I've used Ortega or not but if you're newly diagnosed, perhaps the spices are just too much for you until you heal more. Our bodies can be pretty wonky at first. I know there are recipes for making your own taco seasoning and I've been tempted to try it and know exactly what's in it (probably a lot cheaper, too).
  2. Welcome to the forum! Yes, gluten-free bread is the holy grail. I've wondered about this product, too, and am interested to know if anyone has had experience with it. I'm always searching for the *perfect* gluten-free bread recipe...and I've tried a number of them. I have a KitchenAid stand mixer, not a bread machine.

  7. I was wondering about what brand rolling pin to buy...I'll look at the Oxo since I generally like their products. Sometimes I'm cheap...and sometimes I'm not. I have no experience with buying rolling pins in the past 40 years so I'll take your word that the Oxo is a good one. We can sends links on the forum...just can't link to Amazon or other companies...
  8. Darissa, I searched Amazon and they do offer rolling pin covers. Since I can't link, check Rolling Pin Covers (4175) Pk/2 by Fox Run. Cost $3.07 with free shipping. Now I just have to buy a new rolling pin and silicone baking mat plus add the rolling pin covers. I received a couple of Amazon gift cards for Christmas. Shopping time!

  11. I've seen Better than Bouillon at my local Wally World as well as other grocery stores so you shouldn't have too much of a problem finding it.
  12. You have to be careful with chicken bouillon cubes, too. When I was first diagnosed and cleaned out my pantry, I had a jar of chicken bouillon cubes that had wheat in them, which I donated to a food drive. HerbOx is gluten-free and says so on the label. There are several canned or boxed chicken broths that are gluten-free and include Pacific Natural...

  14. The one I'm looking at was one of Jules' recommended products and I have a couple of Amazon gift cards that are burning a hole in my pocket. I've become a kitchen junkie. And it's large, about the size you mention. I don't plan to use it in the oven either. I hear you on the dough being sticky. I have found a love of parchment paper to put on baking...
  15. I wish I had a Whole Foods around here! In the meantime I've only made a couple of pie crusts but need a new rolling pin and silicone baking mat. What brand silicone baking mat do you have...or doesn't it make any difference? I would never have thought of using cheesecloth so that's definitely going on my shopping list. I know Jules recommends those...
  16. My favorite is definitely homemade...and it's also the recipe from Jules' blog. I do use her flour. In fact I sent a few bags to my son-in-law and the last time I talked with my daughter, she says her hubby's pizza is even better than the best gluten-free pizza they used to buy. And they live in Denver, which is a gluten-free haven.
  17. Have you checked into Bluebonnet vitamins? I'm taking their chewable Vitamin D3 (2000 IU) that I buy at my local health food store. Open Original Shared Link Free of milk, egg, fish, crustacean shellfish, tree nuts, peanuts, wheat and soybeans. Also free of yeast, gluten, barley, rice and sodium. Hope this helps...

At 18-months following my diagnosis, I was still having issues and could not figure out what was causing them as I was very careful with my diet, did not eat out, etc. Listen to Irish Heart and start taking probiotics (Culturelle for me). I cannot tell you how amazingly well I feel. I did pretty much give up dairy right away and I missed dairy products...
  19. I also have a problem with a nickel allergy and cannot tolerate aspirin. But I have no problem eating either unpeeled pears or asparagus, which is one of my very favorite veggies. Maybe we are all so different that there's no telling what we might react to. It's all such a puzzle.
  20. I actually pretty well avoided dairy for about nine months but then I am a lot older than you and I suspect it took me a lot longer to heal. Then I slowly and cautiously started eating small amounts of hard cheeses. Now I'm tolerating lactose well. So don't give up hope!
  21. I think those cookies sound wonderful. I've seen the recipe before but haven't tried them. Since you could make chocolate meringues, I would think these type of cookies would work well. Hey, Jess...don't you have an abundance of egg whites to use up?
  22. I think I'd use the recipe that Ellie posted above and use Pamela's. I just made a double batch of banana-nut bread using Pamela's for a couple of my neighbors. Since my disposable pans were only 8x4", I ended up with too much batter so made 6 muffins for moi. Yummy! I never tried that with the banana bread recipe before. No question that Pamela...
  23. Actually I haven't made any but then I live alone and don't need all those cookies, etc. sitting around here tempting me. And I don't miss them. Hopefully my hips will thank me in January!
  24. I really don't eat much ice cream...it's just knowing that I can! Are you able to handle dairy now?
  25. I don't know if you can assume that or not. I actually have no clue. It was sheer heaven!!! I think I was just lactose intolerant. Not sure if the casein intolerant people can add cheese back into their diet or not after they've healed. Even though I added in cheese, I just tested Haagen Daz ice cream within the last month. I really don't eat that...
