  3. For starters, you eliminate all soy-containing processed foods from your diet for at least two weeks, maybe even a month, and see if it helps. Soy is a declared allergen so it's not too hard to find it on labels. If you think it's helping, then challenge by adding soy back in.

In brief, yes they do tell too many people that they are positive for gluten intolerance. Also, as far as I know, Enterolab only tests HLA-DQB1 so you will only see the DQB1 *0201 from DQ2.5....

  11. Gluten sensitivity and celiac are a disease spectrum, not separate diseases. You are somewhere in the middle, past gluten sensitivity but not full blown celiac. If I were you, I would continue with a strict gluten-free diet as people with positive blood tests can move on to develop villous atrophy.

  13. Any figure in a study will be blood and biopsy proven celiacs, which means they are underestimates. Maki found 2.7% in Finnish adults, which is 1 in 37. They also don't take non-celiac gluten intolerance into account.
