  1. For starters, you cannot make inferences about something like calcium with only one lab result. It's too variable and you are essentially in the normal range. An easy thing to check is vitamin D. If that's low you can't absorb calcium very well. Low D is extremely common. If the low-normal calcium has shown up repeatedly and your D is OK, you may have...
  2. The blood tests are only about 70% accurate. You can be celiac with negative blood tests. My guess with gluten intolerance is that the intestinal inflammation might be interfering with absorption. My mom is negative by blood and biopsy, but had a severe B12 deficiency and low D.
  3. I'm glad I've always specifically mentioned I'm ordering gluten-free. I hadn't thought how confusing that menu could be for servers. From my point of view it gives me a sense of safety. If I'm eating the ONLY ribs Outback makes I know that my plate of ribs can't be inadvertently switched for a different kind of ribs with gluten.
  4. Oh, gosh that sounds hard! On the bright side, super-sensitivity CAN come and go. I went through a super-sensitive phase and now I'm back to eating "normal" gluten-free and feeling fine. Oh, one other thing that makes my life confusing. I can't much tell my gluten reactions apart from mild food poisoning because they're mostly GI. If I cook chicken...
  5. Dissolving something means to get it mixed with liquid. For example, honey dissolves in water. As I'm sure you know, you can't clean up spilled honey by spraying water on it, walking away, and letting the water dry. You have to use some water (maybe on a damp rag) to dissolve the honey and then wipe it off the counter. The honey isn't gone or broken down...
  6. I cleaned up the breadmaker pan and paddle really well, and made sure the inside of the top of the breadmaker was really clean. (I was worried about old flour falling on my bread.) I didn't worry too much about the bottom of the machine by the heating coil because the bread never touches it. I don't make gluten bread any more so no new flour is going in...
  7. CC on shared lines makes a LOT more sense than undeclared gluten. That's a serious accusation to make lightly, as good companies like McCormick are careful to declare wheat in the US. They genuinely don't want to make their customers sick. (They also don't want a big FDA recall or mis-branding lawsuit!) Trust your gluten reactions, but always suspect...
  8. Sorry to be confusing. I went on a bit of a rant. The BioCare product looks to be the kind of enzyme Alvine is running clinical trials on. It might be helpful! You are correct that gluten is slow to break down. The bit that causes trouble is a very sturdy smallish fragment too, so even if it the wheat breaks down a little it's still a problem. Proteins...
  9. Olive oil that's just starting to go rancid has a weird "dusty" smell to me. Once it's really oxidized you can't miss the distinct smell of old vegetable oil. Fresh oil smells of olives if it's dark, and like any other vegetable oil if it's light. I used to refrigerate mine but a professional chef told me it changes the flavor? It also tends to get thick...
  10. No worries and no offense taken. I have rather a lot of scientific training, and I attend talks on celiac whenever I can, plus stay very abreast of the literature. Maybe I should change my nym to Dr. Sklyark. The people who make this product are guessing, based on promising animal studies. For the third time, Alvine is in the middle of doing the human...
  11. You don't need to check the date. Just sniff it! It's easy to notice when it goes "off" and I agree it can happen pretty fast.
  12. I AM a professional. I just don't write in technical terms on the board because nobody would understand me. I saw a talk on that enzyme not too long ago. In a test tube, that enzyme breaks down gluten into what should be safe components. It's slow enough that I'm skeptical that it will help all celiacs. It takes a few hours to work, which is long enough...
  13. I don't consider canola healthy so I use light olive oil.
  14. All of the DPP-IV like based products Gluten Defense are snake oil. Do NOT take them to try to save yourself from gluten because they don't detoxify gluten at all. Biocare looks to be selling the real deal that Alvine is running clinical trials on. Dr. Chaitan Khosla who they quote on their website is the founder of Alvine. You will not likely find...
  15. You're welcome. Thank you for your service! I'm sorry to hear that soldiers with gluten issues can't necessarily get safe food. I'm surprised you're not getting thyroid testing; gluten intolerance/celiac is a common cause of thyroid disease. I think perhaps the best route if the biopsy comes back negative is to see if you can find a dermatologist familiar...
  16. Hi and welcome. It sounds like you may be suffering from neurological symptoms from gluten. With neurological autoimmunity EVERY SINGLE BLOOD TEST CAN BE NEGATIVE!!! They are only looking for the GI antibodies. You may have a negative biopsy as well, if the damage is primarily in your skin and nervous system and not your gut. Even the genetic testing...
  17. Hi and welcome. If the panic gets bad, I use an acupressure/tapping technique called Emotional Freedom Technique (EFT). I don't know why or how it helps, but it does. It's somewhat better than EMDR. Open Original Shared Link explains what it is. They've gone commercial but you can still get the original free manual here. Open Original Shared Link Gary...
  18. Wow! I hope she doesn't get growing pains too badly from that one. That's just great to hear!
  19. You run across people who can actually tell you what's in the sauce? I've not been that lucky.
  20. HMO physicians do NOT have the time to stay abreast of literature. They work 10-hour days and come home exhausted. They take their required CME credits and most wish they had time and energy to read literature but they don't. HMO patient loads are too extreme. When doctors get time off, many are like you and me. They want to go do something unrelated...
  21. Your friend must be mistaken. Nobody who runs a big chain of restaurants is dumb enough to think spelt is gluten-free. I'm sure the pizza is safe.
  22. I love getting ribs at Outback. I can never be sure about barbecue anywhere else so it's a treat. The gluten-free brownie dessert with ice cream is also excellent.
  23. Between my multi and extra D3 I'm taking about 3,000 IU of D3 a day to stay over 30 pg/dl. I don't seem to absorb it very well. I feel generally better taking the vitamin D. Less fatigue and run-down feelings.

    ARCHIVED Rsvp

I've taken to desperate measures like "RSVP so I have enough treats!" on the invitation. People are terrible about responding to invitations. I would figure on the four and a couple extras too.
  25. Oh, gosh. This guy is an idiot. Celiac cannot be diagnosed from stomach biopsies. The biopsies must be taken from the small intestine, and the state of the intestinal villi are diagnostic for celiac. I can't understand how the estimated 1 in 133 Americans with celiac would be "exceedingly rare." If you are only diagnosing with Marsh 3 or 4 biopsy there...
