ARCHIVED Can't Eat Dairy Again
Marilyn R replied to sandsurfgirl's topic in Coping with Celiac Disease
It's strange. If I take a gluten-free multi-V with iron, it tears me up and I get C in a bad way. However, I can cook with cumin seed, powdered cumin, make cumin tea (it's high in iron) and not have a problem. I get how awful it would be to re-start an elimination diet and I'm glad you're feeling better. Maybe if you just give your gut awhile to... -
ARCHIVED Looking For Sub For Xanthan Gum
Marilyn R replied to AVR1962's topic in Gluten-Free Recipes & Cooking Tips
"I have to ask, because someone else told me she has a problem with it...but how on earth did you determine carrageenan was an issue? How do you isolate it --when it is almost always IN something, I mean? Did you take a seaweed supplement to figure it out?" Ravenwood suggested that it might be a problem for me. I was eating very simply (root vegetables... -

It sounds like you're working on an elimination diet, if not, that's whatt I'd try. It's rough, but enlightening. -

I wrote abaout this earlier and don't want to be redundant, but sometimes a hot epsom salts bath with baking soda and peppermint oil makes things better, at least so you can sleep well.

ARCHIVED Glutened And Blown Back Up
Marilyn R replied to bauerpratt's topic in Coping with Celiac Disease
Here's what I do. Shake a 1-2 cups of epsom salt, a cup of baking soda and a few drops of peppermint oil in the bath. Fill it up with hot water. Soak. Relax. I originally read about this in a book about autoimmune diseases when I first started getting sick. It's called a Detox Bath. And if you're up for it, you're supposed to visualize the toxins... -

I had a craving for garlic knots today. These were really easy and absolutely delicious, so I thought I'd share... I mixed up a batch of Chebes garlic and onion breadsticks (the pizza mix or bread mix would work too). I used about 1/3 c. grated parm with the mix, and used a very large glass mixing bowl to make the mix so that I could just knead it in...

ARCHIVED Looking For Sub For Xanthan Gum
Marilyn R replied to AVR1962's topic in Gluten-Free Recipes & Cooking Tips
I have avoided baked goods because of guar & xanthum gum issues. I'm thrilled that you're saying you don't miss it in baked goods. If you have any recipes to share, I'd be grateful! -

Yum! Raspberries sound even better! It's so much better with full cream. I'm loving dairy, hope the tolerance lasts. I'm trying to show restraint....out of respect for how it used to wack me. -

I didn't get sick from the whipped cream, so I'm a happy camper! I think kiwi and strawberry Pavlova will be pretty at Christmas... I was thinking lemon something for my next pie. My niece just lost 70 lbs. and was thrilled with the idea of a meringue pie shell. If you can do egg yolks, I saw a recipe for Key Lime pie in a meringue shell. That would... -

My favorite gluten-free product is Udi's mixes. I've tried them all except the cinnamon rolls, but will try them soon. (DP loves Udi's too, and isn't gluten-free.) We like Tinkyada brown rice pasta. And I love Haggandaz Rum Raisin Ice Cream. -

Saurkraut and grilled pork with Chebe's sandwich buns and thinly sliced monteray jack cheese. OMG it was delicious. I've been having a serious craving for cabbage, broccoli and cauliflower lately, so I probably have a vitamin deficit. I wonder which one. K? -
ARCHIVED Skin Has Gotten Worse Since Going gluten-free
Marilyn R replied to Deacon's Garden's topic in Dermatitis Herpetiformis
Is it better to keep those patches dry? (I've been moisturizing them.) As to the OP, I don't know why things seem to get worse before they get better. I feel like our autoimmune system kicks things up a notch because it's all riled up that we eliminated the beast it was fighting. What's stange for me is I haven't had a cold or the flu in over two years... -

I made the meringue crust and filling tonight. I think it's going to be fabulous! (I'm waiting to fill the pie until tomorrow.) I substitued Grand Marnier for the vanilla and used Enjoy Life Chocolate chips. Whipped cream has been an issue for me before, but I'm giving it a whirl... Thanks for posting the recipe. I'm the only one gluten-free tomorrow... -
Canola oil should be fine. I saw older posts which said they buy light olive oil in the super stores to bake with, maybe you'll like light Olive Oil, something to try... Happy Thanksgiving from Popeye.

Marilyn R replied to Chad Sines's topic in Coping with Celiac Disease
My dp had a "duh" moment this morning. At breakfast, he presented the sandwich menu from the new grocery store that just opened near us. I didn't even glance at it. Me: "Are you trying to torture me, or what?" Him: "Well you could order your sandwich without bread!" Good thing I'm in my 50's, This would have been grounds for a break up in... -

ARCHIVED Am I Getting Worse Because I'm Reading Too Much?
Marilyn R replied to GlutenFreeNewB's topic in Coping with Celiac Disease
So you're thinking the more knowlegable you become, the more stupid you get : That isn't logical...but there is a period of time that I experienced, manbe you won't, where your autoimmune system is really pissed off because you removed their favorite warrior (gluten) and started eating gluten-free. For me, my internal warriors hated the quinoa, soy... -
ARCHIVED Questions On Coping In General
Marilyn R replied to josh052980's topic in Coping with Celiac Disease
I'd have to have a xanax to deal with Disney World. (Remembering when some chick with a stroller knocked my mom's walker out from under when rushing to the fireworks.) I wanted to throttle her! -
