  1. Recovery varies greatly from person to person. I believe most people see some sort of immediate improvement in atleast some form. However, feeling "normal" can take a year for those with more severe damage. I have been gluten-free since February. I am no longer constipated as I was for years...but I have no change in my energy levels or muscle pains yet...

  7. Sometimes, even gluten-free foods can cause problems for individuals. For whatever reason, I have been unable to eat turkey for years--it gives me horrible abdominal pain and gas--worse for me than any reaction with gluten ! So...if it is gluten-free...it may also just be a matter of problems with turkey itself...

  10. Sue- Glad you wrote a letter! You never know...I wrote a letter to one restaurant on a bad experience with their gluten-free menu, and they corrected the problem--educated staff, and send me a $50 gift certificate to come back Your letter may make it easier for others as well...

    I second what kaiti said... you have to be your own and your family's advocate..as unfortunately, doctors can be mistaken! and stubborn it would make sense that he was testing normal about being on the diet--it would most likely confirm his diagnosis for celiac, not negate it! so talk to your daughter and share your concern... other autoimmunes...
  14. mary jane- i use a softsoap hand soap...and for my body washes i now use California Baby products. they are all natural and the entire line is gluten-free. you can see them at californiababy.com oh, and i just see rachel posted that she uses those products too. they are great. what mac lipstick do you use? i used to have a ton of their makeup, and...

  16. I was looking at canned tuna this weekend (for my cat : ) and noticed the soy in the tuna too. I figured it was not okay then... But better let someone else answer b/c I haven't even offically started the diet yet ! Questions--before I start I am trying to figure out what I can eat.   23. I see you already enjoylife breads--but I like their cookies and bars too. Also, there is Namaste--they make a slew of baking products--good brownies/blondies.
