ARCHIVED Son In Law Deployment
Diane-in-FL replied to Dixiebell's topic in Introduce Yourself / Share Stuff
If anyone is interested in sending care packages, check out www.booksforsoldiers.com or www.sponsorthetroops.org. My husband and I have been sending packages and letters for many years through these websites. There are others too. And those of you who have people going over, they can go to these sites and sign up to receive support from home. If they... -
ARCHIVED A Little Comic Relief
Diane-in-FL replied to scottyg354's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It seems to depend on the doctor. Mine prescribed pills that were GYNORMOUS! The dose was 4 every 15 minutes until I had taken 12.....this was at 11am. Then the same thing around 5pm. They were very difficult to swallow. Ugh! Other doctors around here use the liquid. At any rate, stay hydrated! Good luck. -
ARCHIVED My Story...getting Really Upset!
Diane-in-FL replied to Bella001's topic in Coping with Celiac Disease
It would be a good idea to get your Vitamin B12 and Vitamin D checked too. Deficiencies in those can cause some of the things you describe. Good luck. -
ARCHIVED Easy Graham Cracker Crust
Diane-in-FL replied to ndw3363's topic in Gluten-Free Recipes & Cooking Tips
Kinnikinnick also makes "graham cracker type" crumbs that are really really good. Taste just like the real thing. -
I like Indie Rock. I listen to Sirius Alt Nation most all day. Some of my favorite bands are Muse, Metric, Airborne Toxic Event, Arcade Fire, Vampire Weekend, Weezer, and on and on.

"My motto is that if I didn't make it and I can't read a label for it, I can't have it." Jenn......I really like this motto!

ARCHIVED Pie Crust
Diane-in-FL posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I made a lemon meringue pie yesterday (my husband's "birthday pie" ) with Whole Foods Gluten Free Bakehouse frozen rice flour crust. Those crusts are REALLY REALLY good!!! I found them at a Whole Foods Market, which, unfortunately, is 3 1/2 hours away from me. *sigh* It's a rare treat for us to take a long ride like that, especially with gas prices... -
Kinnikinnick makes a really good hamburger bun. Have you tried them?

ARCHIVED How Can I Handle Watching People Eat All The Things I Want To Eat
Diane-in-FL replied to zus888's topic in Coping with Celiac Disease
It is really hard at first. I wanted a pizza SO bad. But the cravings will go away, especially after you discover that some of the substitutes are as good. We make a homemade pizza dough that is really good. But I don't know if I could have gone to Olive Garden so soon into the diet. Actually, I haven't been there yet. I just don't trust food made by... -
ARCHIVED Gluten-Free Bread Suggestions
Diane-in-FL replied to K8Hanna's topic in Gluten-Free Recipes & Cooking Tips
I like Udi's bread best, too. Kinnikinnick English Muffins and hamburger rolls are really good. Also, Schar's dinner rolls (which I slice in half and use for sandwiches sometimes), but I didn't care for Schar's bread. Icky texture. The dinner rolls are best buttered and then "toasted" in a skillet. Haven't tried Rudi's products.....haven't seen them... -
ARCHIVED Bread Crumbs - What To Use
Diane-in-FL replied to NancyL's topic in Gluten-Free Recipes & Cooking Tips
I use Rice Chex. I just put some in a plastic bag and smash them with a rolling pin. Kinnikinnick makes a Panko style "bread crumb", which I have bought, but not tried yet. -
ARCHIVED Going To See A Natropath Next Tuesday
Diane-in-FL replied to hnybny91's topic in Coping with Celiac Disease
My husband has been wonderful, but the people at work, not so much. I think they think it is all in my head and that food intolerances aren't serious. There's a certain tone of voice when they say stuff like "Oh, you can't eat that, can you?" and probably some eye-rolling when I can't see them. Sorry your husband is being a jerk. Makes this all the... -
ARCHIVED Let's Talk About Willpower In The Face Of Temptation. :)
Diane-in-FL replied to Monklady123's topic in Coping with Celiac Disease
I don't cheat either because I know what the consequences will be and I really don't miss most things, except a really good pizza. This is different from other "diets", where all that will happen is that you might gain a pound or two. Cheating on this means being sick......don't want to go back to that. Snickers is gluten free? What about Milky Way... -

ARCHIVED My Parents? I Need Advice!
Diane-in-FL replied to guitarchik's topic in Coping with Celiac Disease
If you did get diagnosed, maybe your doctor needs to talk with your parents to emphasize how important this is. They seem way too nonchalant about it. Good luck! -
ARCHIVED Flourless Chocolate Cake
Diane-in-FL replied to sa1937's topic in Gluten-Free Recipes & Cooking Tips
That looks utterly sinful, Sylvia. I bookmarked the page of course! -
ARCHIVED Bathroom Urgency
Diane-in-FL replied to tea-and-crumpets's topic in Coping with Celiac Disease
That was my main issue too. I am having more good days than bad days now, but occasionally something will mess me up. Apparently, I can't tolerate soy or corn either. Before, I didn't want to go any where because I was so anxious that I wouldn't be able to get to a bathroom in time. Wretched times those were. Quite debilitating actually. I think things... -
ARCHIVED Gluten Free Flour Substitutes For Baking
Diane-in-FL replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
I haven't tried a carrot cake yet, but have had good luck substituting Bob's Red Mill gluten-free All Purpose flour in other recipes. It tells you on the package how much Xanthan gum to add per cup of flour. -
ARCHIVED Anyone With An Unsupportive Spouse / Family Members / Friends?
Diane-in-FL replied to Menqet's topic in Coping with Celiac Disease
I agree with Karen, too.....your husband is going to be a detriment to your health. I can't believe how insensitive he is. -
Did those blood tests include checking for Vitamin B12 deficiency? That could still be a problem, even after being gluten free for a while. As I've discovered on this forum, it can take several months for the intestines to heal and absorb vitamins properly. My levels were too low; after taking supplements for a while, they got back to normal and my doctor...

ARCHIVED Cool Surprise
Diane-in-FL replied to Diane-in-FL's topic in Gluten-Free Recipes & Cooking Tips
Hi IrishHeart......sorry, I should have been more specific. It's the Gluten Free All-Purpose Flour. -
My husband, who likes to cook and who loves coming up with new ways to prepare our favorite foods, discovered this neat trick: that gluten-free flour (Bob's Red Mill) makes an amazing coating for chicken or pork. He just puts boneless chicken breast fillets in egg, then in the gluten-free flour, then cooks them in a skillet with olive oil. The gluten-free...
