  1. Funny this should come up ... I happened to make almond butter tonight. I did this one: Open Original Shared Link I did add a little over 1/2 tbs of coconut oil but I suspect it would have been fine without. Came out great and it was really easy!
  2. I've been making the breakfast bread from Elana's pantry ... has an almond butter base, no flour. My son loves it! I'm going to have to try yours!
  3. If you are willing to do one from scratch, the vanilla bean cake from the Spunky Coconut is awesome. I do it every year for my son's birthday. It is free of all those things you listed. I usually do the frosting from Enjoy Life chocolate chips which does have corn I believe, but I'll bet you can sub something else or change up the frosting.

  6. Do you have a dehydrator? My son loves "strawberry chips" - we slice strawberries thin and then dehydrate them. What about dry cereal? Any chance that she'd do kale chips?
  7. I make "Larabars" all the time. Not exactly low calorie, but I throw some dates, a handful of cashews, a dash of vanilla, and a pinch of salt in the food processor. Usually add some chocolate chips too. If it's too sticky, I add more cashews until it's the consistency I want. You can roll them into little balls but I like them shaped like a cookie. Literally...

  9. Do you have a stand mixer? I don't think I could bake gluten-free yeast bread without mine. Really, yeast is nothing to be feared (spoken by someone who's baked a few bricks) I still think your best bet is to buy a mix as it includes all the flours/starches and packet of yeast).   10. Hi - We haven't tried them regularly but we got some samples. For what it's worth, my son does like them. But I'm skeptical that they provide much nutrition.   11. It is - I'm thinking something that relies on baking soda or powder for the "lift" rather than yeast. I don't know why I'm so chicken about the whole yeast thing ... I think part of it is b/c gluten free ingredients are so expensive I worry more about cooking disasters.
  12. Does anyone have a good sandwich type bread recipe (not a sweet bread like banana or pumpkin) that doesn't use yeast? I'm a little intimidated by the whole yeast thing!

  14. I made the Mrs. Leepers cheeseburger mac last night and it was AWFUL! I couldn't even eat it - really salty, strange aftertaste. I should have known ... next time I'll just make something similar from scratch.
  15. I know it seems so overwhelming at first! This board has been incredibly helpful to me. I have a 4 year old too and I know how picky they can be!   16. Hi - My son appeared to have a reaction to Rice Dream. He normally drinks almond milk but Rice Dream was on sale so we gave that to him instead for a week.   18. I wonder if you could also increase the oil slightly. I make the egg-free cookies from Elana's Pantry a lot (the chocolate chip cookies are a staple in our house!) and sometimes add an extra tablespoon or so of whatever fat I'm using (coconut oil, shortening, etc.).   19. I know what you mean! One thing that has helped me is to try one of a product to make sure that my son likes it, then bulk order several packages through Amazon. I also order my almond flour from them 5 pounds at a time. I also have some really cheap meals in my rotation ... scrambled eggs, recipes with beans, etc. Baking from scratch vs. buying pre-made...
  20. Almond milk, banana (either frozen or I add a few ice cubes), maybe a squeeze of honey plus a handful of spinach or frozen carrots or canned pumpkin. I really like sneaking a veggie in!

  22. Another option for sweetener might be Stevia. There are a couple of blogs with gluten free, dairy free, and sugar free recipes. I know of the Spunky Coconut and Elana's Pantry, but I'm sure there are others.
  23. I would recommend that you go after this 2 ways - getting him checked out physically and also going after the speech delay. Every area has an early intervention program that can evaluate him and if he qualifies provide free therapy. If there is a speech delay, then early intervention like speech therapy is most effective early. If your insurance covers...
  24. OK I've got to defend Domino's (at least a little). My son is not celiac, he is on a gluten-free diet for his autism. We have discovered that he can handle limited amounts of gluten, so we don't worry excessively about CC. We see behavior changes when he gets a lot of it (i.e. several meals or days in a row) but can do the occasional birthday cake or grilled...
