  1. Other than predisposition I'm not sure the genetic tests are good for much. Although if you show positive on genetic testing it could lead to having family tested. My GI wanted me to have genetic testing, more blood work and an additional endoscopy to diagnose me. (If he was so alarmed by the sight of my intestines that he felt I needed a biopsy I don't know...

  3. But they didn't taste bad! See, it's practically a success. Gosh, 1/8"? Crazy! If I was gonna be deep frying some pies I'd want it a bit thicker than that to hold up a little better. I keep my paper thin crusts for in pans. The more you practice the better you'll get at it. It never really gets less messy though.
  4. While it sounds like you've eliminated the potential for CC from foods, it's possible you're getting it from your environment. Are you using old cutting boards, cookware, etc that may have been in contact with gluten? I won't go so far as to say you require meats and such (although I am a firm meat-atarian) but are you getting enough protein in general...
  5. I know that I am not allergic to wheat although I do have celiac. I'm not sure that anyone who is truly allergic to wheat would ever be capable of ingesting enough gluten to be tested for celiac. I suppose they could live off rye and barley... yeah, that would suck.

  7. Unless you need your doctor to back you for something, do you really need a diagnosis? You say "when you can afford it" so that means that it could be a while. The longer you are gluten free, the better you are likely to feel. It also means that the time you spend eating gluten for the tests will also be more rough. Some people need a firm diagnosis for one...

  9. Steak tonight. I'm thinking about stopping at a roadside stand on the way home for some corn. I have frozen corn but it just isn't the same as corn on the cob. Worst case scenario I'll have to just have plain old corn with mashed taters and slather it all in some gravy. Poor me!

  18. I make pie crust with the recipe on the side of the box of lard. (The brand in the blue box/tub.) It turns out perfectly flaky but not crumbly at all and I simply use rice flour and not a flour mix. I think it would probably work well rolled out thick and deep fried.   19. I know that it's outrageous and crazy, but I won't shake hands with anyone or touch anything at church before the sacrament. If I'm going to touch something that is going in my mouth, I wash my hands then touch NOTHING. Everyone at church probably things I'm just a little bit nuts.

  21. At all of my local theaters the popcorn starts as gluten free. It is popped in either peanut or corn oil depending on which one I go to. One problem could be the butter sauce, which is practically liquid soy everywhere. Another problem could be CC. With cantaloupe and honeydew I cut them in half and use a large spoon to gently scrape out the seeds. It's far less messy and it sounds like it would save you a lot of trouble.
