ARCHIVED Please Help....lunch Ideas....i Need Them!
Adalaide replied to mommy2krj's topic in Gluten-Free Recipes & Cooking Tips
Quesadillas are a huge lunch thing here. Only grown ups, but they're super kid friendly too. You can add meat, or not. Add veggies, or not. And, our all time favorite kind ever, pizzadillas! Just the thinnest layer of spaghetti or pizza sauce, a smattering of mozzarella or pizza blend cheese and whatever you would use as pizza toppings. Pepperoni mostly for... -
ARCHIVED May God Bless Our Firefighters!

This is a horrible tragedy and my heart and prayers go out to all of the friends and family of those lost. We would also do well to remember to keep those still fighting and those who will spend the rest of the season fighting in our thoughts and prayers. They'll need it with these conditions. I think bartfull hit the nail very much on the head. These... -
ARCHIVED Any 'canners' Out There?
Adalaide replied to notme's topic in Gluten-Free Recipes & Cooking Tips
I grew up spending the entire summer and fall in the kitchen canning. And part of the winter too when we were still butchering our own deer and cows and pigs. I will say that there is nothing in the entire world that tastes like homemade venison mincemeat. It is positively one of the most divine things one can ever eat. In the most recent years we... -

I know you won't forget. The heat is what it is. I'm pretty beat for the day myself and won't do much more than sitting on my butt and dinner after my trip out this morning in the sun and heat at 9 in the morning. Whoever ordered this heat is no longer allowed to place orders. Ever. How do we cope? A/C of course! I rarely leave home in this kind of... -

In my experience most spaghetti sauces are gluten free. I always bought Classico because it doesn't taste like chemical crap. If you want to try something "exotic" Dave's has a nice butternut sauce, but it is rather expensive. ETA: I shouldn't have conversations while typing. I type what I mean to say and say what I mean to type. -

Needed to go to Home Depot to pick up some things. Got up super early to avoid the heat. Got home at 9:30 and it is already 80. There isn't really anything the low humidity can do for us with these temps, it is just too damn hot! Since this is an outdoor project that involves painting something, I suppose it'll have to wait until about sunset so I can go... -
ARCHIVED Cross Contamination Question
Adalaide replied to Chef Steve's topic in Coping with Celiac Disease
Having worked in restaurants and used this method myself, I can say it is pretty rare to see any significant length of time pass without any small food particles ending up in the rinse water. If you wash the gluten free dishes first, it shouldn't be a problem. If not, you could end up with an issue. I wonder also if the pans are stainless steel or non-stick... -
Open Original Shared Link Open Original Shared Link The first link says "4.3% of UK and 6% of sprue patients had autoimmune thyroid disease" but is old. (1997) The second lists 10%. Based on the US population there are roughly 3 million people with celiac here. Making beer for 300,000 people, nationwide, is just not a financially sound business...

Thyroid disease is more common is celiacs than in others. But, it isn't nearly so high as you may think. Open Original Shared Link Companies are trying to make a good tasting beer. This is already difficult enough when making a gluten free beer. It seems silly (imo) to expect a company to cater to an extremely small subset of an already small (compared...

Apparently I have given myself a very serious problem. I am now addicted to brussel sprouts, they're for dinner again. I threw together some scalloped taters. My husband wants his bratz which I can't possibly eat so I'll just have a burger. -

More purple. And okapis are giraffes closest relatives. They're like funky tropical giraffe cousins. Still, as much as they're like each other... they're not too. (An okapi would make a far more practical home pet due to its smaller size. I've put a lot of thought into these things.) -

Well... I was looking first for a general all purpose type to see how it works out. The sort of thing I can have for the summer, burgers, fries, tots. Just sort of get my feet wet and see how I do. I grew up with Heinz, and I know that whatever I make at home will bear as much resemblance to that as an okapi does to a giraffe. But I'm adventurous and sick... -

Okay, so somehow we all ended up forgetting about this and becoming totally side tracked. I was looking at like 4134895145 recipes for ketchup online then it suddenly occurred to me that instead of making something and shooting in the dark at something that may or may not suck I should ask our resident expert! -
Or scratch that and just do the bacon ranch tots and put them around little cheese squares. I still like the idea of them being bacon wrapped though. I think it has been far too long since I've had a tot, I need to make some! Open Original Shared Link

I saw this recipe once and thought I would like to try it. I'm thinking that again but I have a brilliant idea. Instead of buying tater tots, wouldn't it almost be easier to just make tater tots and shape them into little balls around the cheese?

I'm not allowed to have bacon in the house. Because I apparently have about as much self control as a toddler would if a cookie jar tipped over in front of them. I wanted to make them with bacon but figured that sausage would have to be a suitable substitute and just cooked it until it was itsy bitsy crispy crumbles. HAH! I showed it! I would totally... -

I was 100% unimpressed with the bacon ones. I told my husband to eat them all. When he finishes them off we'll open the cheese ones. Depending on how I feel about them I may or may not get the buffalo ones. I loooooove buffalo things. But if I don't like them, I have no one else to eat them, I doubt he'll touch them. -

I scrapped the corn idea when I got to the kitchen. I remembered I have brussel sprouts in the fridge. Fresh and beautiful and just dying to be eaten. I wasn't sure what I wanted to do with them so I started poking around in there and remembered I have an eensy bit of loose sausage from the other day. I fried about a tablespoon of that, threw in some olive... -

Unfortunately with an intolerance an allergy test won't help. The only real help is eliminating a food and then eventually adding it back to see if it bothers you. Lots more people than me have experience with that sort of thing. Still, with the type of reaction he had, as a mother I would want to know what it was to avoid it in the future. Not many things... -

I don't see anything in particular that could contain gluten but one thing jumps right out at me immediately. Both times a cutting board would have been used. I was looking up the website for the company, and I guess you're in Canada? Didn't they just pass some new law about gluten free labeling? It has been 100ish every here day. Last night when I rolled in at 1 in the morning it was still 80. This is entirely not normal here. Then again neither was our dreadfully cold winter. I can take the 80 in the middle of the night, it feels downright awesome... 100 in the middle of the day not so much. -

I went out today and trimmed the hedges harvested my mint. The fudge recipe I found says 1/2 cup and I can easily double that recipe and have leftover Moroccan mint. I need 3 cups of strawberry mint for my mint chocolate chip ice cream. I think I'll have right about enough for that when I go get it off its stems. If I'm short I could probably get a bit more...
