Concentrate on some new foods. I discovered problems with 49 of 60 foods that I ate regularly. Now I avoid them all and am thinking it is doing good. My functional medicine nurse said that low iron levels are often a very early indicator of celiac. I am curious about this and wonder if anyone has tried reversing it with diet. I found using nuts for flour expensive, but soon learned my family needed much less food. I think everyone's digestion worked a bit more efficiently. I would certainly agree with making things from scratch. My major concern is being in control of what goes into it. -

I asked the GI doctor to look at some nutrient tests that I had done and tell me if it looked like celiac could have caused the Mal-absorption and later increase in absorption and nutrient levels. The details of your endoscopy report sounded to me they might possibly indicate celiac disease, but perhaps it is the SIBO?. Possibly you could get a second opinion somewhere. You asked if I was diagnosed after a challenge. No, because I could not submit to eating gluten for any amount of time. My best proof of having celiac is my genetic test which showed 4/4 gene copies for celiac! Anyone else? -

Buy a bunch of kale from the store or pick it in the garden. Wash if needed. Shred off the leafy parts in bite size pieces and toss with a tablespoon of olive oil. I have a similar diet. Problems with rice and corn. You might look at paleo or SCD diet. The GI doctor just mentioned Foodmaps and I thought it was remarkable that it is similar to what I have come to use. I suggest trying to add as much as possible to your diet. I can eat eggs, but not chicken, so I don't think the two have to run together. If I had trouble with chicken eggs I would most certainly try quale, duck, or goose eggs to substitute. I believe you. I think that my Functional Medicine Nurse uses diet with autism. I realize that one of my family members would get hyperactive due to diet, while I seemed to get depressed from the foods that made this family member active. These are mind responses, I think.
