I've been to St. Maarten / St. Martin a couple times, but unfortunately both times were pre-diagnosis. However, I do remember eating a lot of fish. Which side are you staying on? I usually take Pepto Bismol, which sometimes can help a bit, sometimes not at all. I have one of those heating pads that you put in the microwave that aleviates the pain while it is on my tummy. I was taking to my mom over the weekend about it (her and my dad went to Italy several years ago), and as of I think I'm going to do Florence, Venice, Rome and the Amalfi Coast (along with as much of the surrounding towns of those cities as possible). I had the worst experience I've had at any restaurant at a Pizzeria Uno's a couple months ago. If they came out with a gluten free pizza, I might go to a different location and try it but I'm not sure. It was a really, really horrible experince; just one blunder after another. -
I use the graham crackers by the Grainless Baker as a crust when I make cheesecake. Everyone loves it. I made a cheesecake for Christmas to bring to my inlaws, and a week later his aunt was still raving about it.

OMG, I would eat at Risotteria every day if I lived 5 blocks from there. LOL!!! I've actually spent half the morning debating whether I should go down there for lunch. I work in Times Square so I can easily just hop on the 1, but I'm being really lazy. Begging them to deliver here didn't work

I haven't even had a time to read it yet this morning, but there is a big article in The New York Times this morning. I skimmed it real quick and it looks like it's on the different restaurants in NYC with gluten free menus and some of the blogs, etc. It also has the recipe for Risotteria's breadsticks.... which I believe is the same recipe they use...

NY. Two of the 4 major pharmaceutical companies are based in the tri-state area. Merck's headquarters are in NJ and Pfizer's headquarters are in NYC. You don't have to live in the city. I live in a suburb in Westchester 35 mins. outside of the city and commute in. -

Tinkyada does make a large shell that is used for manicotti. I can usually find it at Whole Foods or Wild Oats. -

Tons and tons of candy is gluten free. To name a few: Almond Joy, Baby Ruth, M&M's (plain or peanut), Jelly Belly Jelly Beans, Mounds, 3 Musketeers, Reese's Pieces, Reese's Peanut Butter Cups, Tootsie Rolls, Sweet Tarts, Hershey's kisses, hershey bars, york peppermint patties.
