ARCHIVED Enriching process
Victoria1234 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
How come gluten breads and regular cereals are enriched with vitamins, but gluten free are not? Just wondering about the phenomenon. -
ARCHIVED Good lunches for work?

Fantastic ideas! I love the idea of cooking just once per week and divvying things up. I totally need to go buy some Rubbermaid style containers asap. And double check my stock of zip lock bags. And I need to get that cutlery too. Ok I need a shopping list first and carefully go over this thread again. Thanks so much. -

ARCHIVED 7 Months in, still having "off" days :(
Victoria1234 replied to Fbmb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I've been gluten-free since 2008 and still have issues with a day or two of not going. No idea why either. Not exactly your issue, but a bathroom issue that's kind of related I have gobs of stress right now, and the not going makes it worse. I do so hope that you can enjoy the days you are regular, and not beat yourself up when it's not. That's what I try... -

Gluten free hosts here: Open Original Shared Link the 20ppm is ok with the Catholic Church, or so I've read. Communion is supposed to have a certain amount of gluten in it. -

Thanks! But I meant it as a joke, if not a rather unfunny joke. I was just picturing the big block of ice/potato soup sitting on the dash without even a bowl under it and just flowing all over the car. Ruining everything and stinking like mad. I probably should have used an emoticon with my post. Or several. Thanks again for your concern -
My dh looked a lot like yours. It could have been me you took photos of. I got it on my elbows and scratched like crazy too. My biopsy showed dh. My dh didn't go away until I went gluten-free cf for a few months, then for a couple years, the itch, not the rash, was the first sign I had glutened myself. Now I don't even get an itch (I've been gluten-free since...

ARCHIVED Daft questions!!
Victoria1234 replied to Shelley2's topic in Parents, Friends and Loved Ones of Celiacs
Welcome to the forum! not a daft question at all. I think straw is what you have after the wheat grains have been harvested... I think. Someone please correct me if I'm wrong. But of course I'm sure some of the grains could remain. It's bound to not be perfect. So I imagine rolling around in it and sitting on it is not necessarily going to get it in... -
ARCHIVED Good lunches for work?
Victoria1234 replied to Victoria1234's topic in Gluten-Free Foods, Products, Shopping & Medications
The greatest idea here is that now I can defrost the potato soup my husband makes and freezes for me faster. Putting it on the counter takes forever as it's basically a big block of ice. -

Sounds delicious! Today I'm home early so I'm not as deathly hungry as usual, or else I would have salivated all over my iPad. -

Luckily my mother in law left a couple coolers here a few years ago and she didn't want them back. So we've got some decent ones. My oldest son will also be in the same summer program with me, so we can pack a lot into two! He's a big guy with a big appetite. Thanks for the ideas! -

I'm so sorry you are having this issue. I used to be exhausted and it turned out to be sleep apnea. A simple sleep study will help you with this. My husband told me I snored and seemed to stop breathing a lot. He was right! Now I feel loads better. Good luck to you. -
ARCHIVED Best gluten-free bread
Victoria1234 replied to gluten confused's topic in Coping with Celiac Disease
Try gluten-free tortillas or corn tortillas. I'm not wild about any bread I've tried and frankly can't afford it anyways. My husband makes me a quesadilla and I'm happy -

ARCHIVED Gluten free stool related
Victoria1234 replied to Guelphgluten91's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Not sure about the stools, but....why are you gluten free before your endoscopy? You need to be eating gluten for , I think, twelve weeks beforehand. You don't want to miss out on your diagnosis because of that. From what people say, the longer off gluten, the more difficult it is to go back on gluten as the body reacts more extremely, at least for some. -

ARCHIVED Good lunches for work?
Victoria1234 replied to Victoria1234's topic in Gluten-Free Foods, Products, Shopping & Medications
Great ideas! I'll buy a pack of plastic spoons today. For my summer job, I'm going to be working with a person who is disabled, throughout the day. In the morning I take them to their work site and help them, then in the afternoon we do something social. Never had a job like this before so I don't have a clue as what to expect! I hadn't thought about... -

You are the sweetest, thank you. I will certainly remember that in the future. When I get hungry I just get stupid. And then I think I shouldn't spend any money on food, unless it's very value priced. -

Great idea! I'm so hungry right now (I didn't pack enough food - not the summer job yet but only a week left at this job) and I'm thinking if only I had packed a jar of pb I would have been eating spoonfuls! What is wrong on these days I don't know. Yup, it's going to get super duper uber hot in the car this summer. Great idea to pack the cold bag inside... -

Those are some great ideas, thank you so much! I never know how hungry I am going to be on a particular day. Some days I could eat everything and more, other days, not so much. I love the idea of keeping things in the car, just in case.
