    ARCHIVED Bloated

Xanthan gum makes me have drastic bloating and pain. I'm not intolerant to corn in any way, so I can't understand why Xanthan gum does that to me. I handle Guar gum just fine. Sadly, most gluten-free mixes are made with Xanthan gum, not Guar.
  2. I'm only about an hour from Lawton - in Norman. There's a fantastic OKC Celiac group that meets bimonthly. It'd be about 1-1/2 hours drive each way for you, but I think it would be worth it.
  3. Open Original Shared Link I eat there about once a week with no problems. I ask them to use a clean bowl to mix the salad in, but that's it.
  4. I've not had any tests to determine whether I'm celiac or not, but by my life-changing response to going gluten-free, my naturopath said that that was enough proof to him that I was a Celiac. I don't have any qualms about calling myself a Celiac - in fact, as far as I'm concerned, celiac and (legitimate) gluten-intolerance are the same thing. The...
  5. Bette Hagman's cookbooks come to mind when I think of nutritional info, but I think your best bet is doing it yourself - it's so easy. Sign up for a free account at Open Original Shared Link and enter in all the ingredients of the dish, then divide by how many servings it makes. This way you will get more accurate information because you're using the individual...
  6. That first response made my blood boil. You did/said nothing to call for that. Please don't let that poster's rudeness keep you from continuing to post.
  7. Why are you being so harsh and rude? There are a LOT of celiacs that are dairy intolerant at first and after time to heal, become able to digest dairy again with no problems. I am one of them - in fact, I knew I was dairy intolerant long before I knew about celiac. I've been gluten-free for 7 months and was just recently able to add dairy (and...
  8. I recommend searching for recipes online. It's free and most are very good. I like CookingLight.com's recipe archive. Almost all recipes on there can be modified to be gluten-free if they aren't already... and 99% of everything I've tried from them is amazing. I find that recipes that are formulated to be gluten-free usually aren't as good as "normal" recipes...
  9. It makes it very moist.
  10. I eat a lot of apples and until recently, didn't even think about peeling the area the sticker was. I've never gotten sick from it, but I now peel the area where the sticker was, just in case.
  11. First off, let me apologize to you for the inherently stupid reactions & comments from your family. Your husband is WRONG. A gluten-free diet does nothing wrong to the body if it isn't celiac/gluten intolerant. In fact, most people that eat gluten-free are HEALTHIER than those that don't need to and don't. We eat a larger variety of vegetables, fruits...
  12. Being a fairly new celiac, this was my first time to meet anyone else with celiac. I could cry tears of joy at how wonderful these folks are... not to mention the AMAZING *safe* food! Just wanted to encourage those of you that haven't gotten involved in your local celiac communities to do so - I'm so excited to get to know these people better!
  13. I have Princella brand in my pantry, but I read on their website that they can't guarantee they are gluten-free. The ingredients are safe, but you never know. I was hoping to make a sweet potato dish for my OKC Celiac meeting tonight but I certainly don't want to make myself and anyone else sick! Thanks!
  14. Yep, it's possible. Like Nantzie said, I felt like someone had "flipped a switch" and felt noticeably better on the second day and even better after that. I had some rough days every once in a while for a few months, but I think that was more due to still being glutened occasionally. Congrats on feeling better!
  15. To be honest, I'd just ignore her offending practices. She's not going to "get it", sadly. I've not had an experience with someone that brought me poisonous treats, but I have had a friend tell me that he thought my "paranoia" (not the word he used) over being so careful about CC was in my head. He had the audacity to tell me a story of his own personal...
  16. I'm having a lot of thyroid and adrenal problems that have caused me to be ridiculously tired all the time, so I've started drinking 1 cup a few mornings a week, and it has definitely helped my tiredness. I have never drank coffee regularly - more like a cup or two a week, except for a period of a few months last year where I drank it every morning at work...
  17. When I first went gluten-free, the symptoms of a glutening were worse than I had felt before I went gluten-free. But over time, presumably as I've healed, the effects of a glutening are less of a problem. While some people would see that as a reason to eat gluten again, I see it as an indicator of how far my body has come in healing itself - I would never...
  18. Hi there and welcome, I wanted to add that there is nothing unhealthy about a gluten-free diet - so if you are unsure about the results, taking him gluten-free will do nothing "bad" to him if it turns out he doesn't have problems with gluten (although with the borderline results, I'd say he probably does). In fact, he will probably be healthier on a gluten...
  19. Hi everyone, I've started eating dairy again and was really looking forward to the Great Value brand yogurts from Walmart. I know that most Great Value products state "gluten free" on the label if it is verified so, and they also state allergens. I was surprised to see that the Great Value yogurts do not state gluten free on the label, but only identify...
  20. Have you tried cooking your meat in olive oil or vegetable oil? Nuts are packed with healthy fats, as are avocados, which would be a nice break for you. When I did the elimination diet, I ate loads of dates. They pack a sweet, dessert-like punch, but are safe to eat (for me at least). I also ate a lot of canned fruits to up my calories. Fresh fruits...
  21. Not only are you losing muscle, your metabolism is slowing down in response to the fact that you're starving your body. It doesn't matter that you're not hungry, you still need to eat. Most adults have basal metabolic rates between 1300-1600 calories a day. That's how many calories your body burns if you lie in bed all day and not move. If you were to...
  22. I use NOW brand multivitamins. They're free of all common allergens.
  23. I'm glad you liked it! What sausage did you use? I couldn't even taste the kale in the soup, but I think it was because my sausage was much spicier and had a lot of flavor. And my husband won't eat soup, either. He says it's not a "real meal."
  24. Those symptoms sound very much like mine, and I have both celiac and hypothyroidism, which are both auto-immune diseases and thus related.
  25. I voted none of the above. I'm not sure if I react to gluten-free oats because I have yet to try them. They're on my list to try, though. I have reacted to dairy since before I knew gluten was a problem, but recently, I've discovered I can handle dairy again. I'm still figuring out how *much* I can handle. I still consider myself somewhat dairy intolerant...
