  8. Polenta and lentils are also gluten free. Lentil soup is really good and polenta can be served with spaghetti sauce. However, since celiacs don't absorb all the nutrients from our foods, I've read that it's GOOD for us to eat processed gluten-free breads and things because they are fortified with iron and other stuff we're always low on.   9. All food labels have to note if there products contain wheat. Cocoa puffs and some of Barbara's Cereals are wheat free. Van's frozen waffles, Oscar Mayer hot dogs, Mountain High yogurt, Lay's potato chips, some Amy's soups and some Amy's frozen meals are wheat free and found in regular super markets. Lots of Kraft and Hershey's products are wheat free and...
  10. I am a second grade teacher. I think it's obviously important to inform the teacher and the cafeteria people about it. As far as sending out a letter, I wouldn't do that. It's illegal for us to divulge that kind of health information...and it's too much of you trying to control other people who don't want to hear about your issues, much less try to accommodate...

  14. The one I went to a couple weeks ago in IL cooked their fries in the same fryer as the onion rings and stuff. But I ate a naked burger and a frozen fruit shake and had no problems.

  16. Night Blindness is a side effect of celiac. I have it as well as sensitivity (pain) to bright light. It's apparently due to Vitamin A deficiency due to malabsorption from our messed up intestines.

  23. I have this problem, too. I imagine it's from lack of nutrient absorption/vitamin deficiency. Just like how I got night blindness from vitamin A deficiency. I was a vegetarian and ate mega healthfully....
