I second the request, I LOVE rice pudding and was eating tons of it until last week, when I had to give up dairy.... A good recipe with rice or soy milk would be great!!

I saw this on the food network, I imagine you can substitute soy or coconut milk for it (I think coconut milk has a higher fat content which would be good for this)

1 cup water

Pinch salt

1/2 tablespoon butter

1/2 cup Arborio rice

2 cups whole milk

4 tablespoons sugar

1 teaspoon vanilla extract

Few dashes ground cinnamon

Whipped cream, for serving

Bring water, salt, and butter to a boil in a medium saucepan. Add the rice, return to a boil, and then reduce the heat to the lowest setting. Shake the pan occasionally and cook until rice has absorbed the water but it still al dente, about 15 minutes.

Bring milk, sugar, vanilla, and a few dashes of cinnamon to a simmer in a separate saucepan. Add the cooked rice and cook at a simmer over medium-low heat until rice absorbs most of the milk and mixture starts to get thick and silky, about 10 to 15 minutes.

Transfer pudding to a large bowl and cool to room temperature. Place in refrigerator until cool and set. Serve with whipped cream and a dash more cinnamon

Thanks for the great rice pudding recipe. But what is Arborio rice? Can I use regular rice?

Arborio rice is risotto rice, you could probably use regular rice, but it wouldn't be as creamy....

I posted a couple rice pudding recipes in my "as promised, a few recipes" thread in the recipes section. (One's coconut, one's mango...)

Using arborio rice is important, as it's got more starch that will be released in the stirring process while cooking. In a pinch, if you can't find risotto or arborio rice (though most stores have it), you could try using sushi rice or other short grain rice, though the results still won't be the same. Sweet rice could also be used, and then medium grain, then long grain. The problem is that it will be less 'pudding-y' with other kinds of rice, because it doesn't have that texture. You can also use rice flour (sweet rice flour) if you want a smooth rice pudding. Basically cooking it with a milk, adding sugar, and vanilla, is all you need for a basic recipe.

Sorry, I think I got you mixed up with another poster.

I hadn't been eating gluten free before having the antibody test done. I started eating gluten free after having the test done because the gastro PA told me to eat gluten-free for 6 months. I'm now 3 months in.

I tend to agree with RMJ. Your doc took the reasonable and practical approach to diagnosis. All things considered, it was the right way to go. However, if you have first degree relatives that show signs of possible celiac disease, urge them to get formally tested before they start the gluten free diet.

It sounds like you have a very reasonable GI doctor, who diagnosed you based on family history and symptoms after eating gluten. I would consider you lucky! The other option would be to make yourself very sick by doing weeks of a gluten challenge prior to an endoscopy.
