I've been getting more and more adventurous lately and I think I almost enjoy cooking.

Awesome! Love to hear it. It opens up a whole new world, doesn't it?

I will be having leftovers from last night. Now I am planning a WOW dinner for Friday night as it is my birthday and I would rather cook than eat out. Not that there are any safe places for me to eat at within a 3-hour radius, anyway, but still. The protein will be rack of lamb. We just got half a local free range spring lamb done up for us so we have lots of yumminess to look forward to!

Hi Lucia, I live in south Florida. This is the first year I've tried growing papayas, so I'm pretty excited.

Marilyn - Congratulations on your success with the papaya trees!

We're having:

-chickpeas cooked Indian truckstop style (according to Madhur Jaffrey, and I know exactly what she means too having traveled around India! Mmmm...)

-braised gingery swiss chard

-brown rice

-mango pickle

Truly vegan tonight. No meat, dairy, nuts, eggs, soy and, of course, no gluten.

I was inspired by the discussion about all the different kinds of rice on another thread to make Thai sticky rice.

-Thai sticky rice

-wilted spinach with peanut sauce

-slivered green cabbage, red pepper, mango, banana & scallion salad with a chili garlic dressing

Vegan!

Thai Sweet and Spicy Shrimp with Rice Cakes (the chewy rice noodle kind) and Spicy Thai Lime Sauce

Stir Fried Vegetables with Toasted Almonds

Strawberries

love2travel, could you share the shrimp recipe? I'm wanting to try something new and this sounds yummy!

I would be happy to. I will be home late afternoon (to cook my birthday dinner!) but will post it tomorrow. It is really very good. Have you had the rice cakes before? They are about 1/4" thick, maybe a touch thicker, and round like cutting off a log. They are one of my favourite new things. They are very chewy as they are thick but so interesting.

Thank you so much! I appreciate it. It is sort of nice to feel spoiled! ;)

Happy Birthday Love2travel!

Enjoy your day. You share birthday with my uncle. He turns 58. today.

Last time I cooked was over the last weekend. On Saturday I made stuffed cabbage, stuffed pepper, vegetarian stuffed pepper, and 4 types of potato noodles (from raw potatoes): gluten-free with farmer cheese, gluten-free with cabbage, regular with cheese and regular with cabbage. I forgot one meal: gluten pasta with farmer cheese for my son. On Sunday I made fried chicken dipped in egg batter, mashed potatoes and peaches. I also baked a very delicious cake. But I got sick on Tuesday with stomach flu, so didn't get to enjoy much from it. Today I feel finally better, but it's that time of month again. :(

Today I had just bowl of plain white rice for breakfast, 1/2 banana and slice of plain Udi's bread for lunch. I need to cook something today, but I have no idea what. It must be quick and easy on stomach.

Thank you, Simona. Make sure to save a piece of your uncle's birthday cake for me!

Oh, so sad you were sick and now...uh...that. I get so sick then, too, with such bad cramps and stuff.

You probably don't want to hear this but tomorrow I am making a delicious birthday cake for myself - three layers of moist white cake with a toasted coconut buttercream filling. I am going to use coconut milk as the liquid in the cake as well.

Hope you feel better very quickly!

Happy Birthday! Have a wonderful day and a yummy birthday dinner.

Many thanks for the good wishes. I so look forward to dinner! Fat, calories and cholesterol don't count tonight. :P

Simple tonight (tomorrow is another fab dinner!).

Poblanos stuffed with Manchego, Monterey Jack and Creamy Chorizo Ragu

Bay Scented Steamed Rice

Corn Salsa

...and...delicious homemade birthday cake! It is a very moist white cake with toasted coconut buttercream and shaved coconut on top.

love2travel, I'm so sorry I missed your birthday yesterday. But happy birthday wishes anyway even if they are a day late. You still have that cake right? Sounds so yummy! Please send me a big, huge chunk --- yes, chunk, not a slice.laugh.gif

I can't help but wonder why your screen name is love2travel when it seems you love nothing more than to cook! Half the time I read your menus & I have NO earthly idea what some of these things are. One day I will learn. When my dh goes away & I can have iodine instead of reading recipes & having to nix them time after time because of iodine content in the ingredients. One day......

Oh, how sweet you are! Truly. Thank you - it was a lovely day with a great dinner. It so happens that we do have a big chunk of cake left with your name on it! How shall I send it? Collect? Fax?

Cooking is one of my several passions but it is tiptop of the list. I do love to travel as well - in six itty bitty weeks we leave for our house in Croatia. Maybe my screen name should be love2travel&cook&eat&read! :P

Oh, I hope you can have iodine very soon. That would be very hard. Is your DH constant? I had it once a few years ago pre diagnosis and I just assumed it was a horrible rash from my new massage therapist's oils. Ummm...no. <_< It was all over my thighs and went away in about three months. I have been very fortunate not to have had it ever since and am very grateful.

My chronic pain is so bad most days that I cook my heart out to help keep me sane and to take my mind off it. It's just quite nice that my husband and I get to reap the rewards! :)

I prepared an entree I found on Pinterest.

A salmon steak topped with crushed pistachios, brown sugar, lemon juice and dill weed.

Bake at 400 degrees for a few minutes. I served it over rice and a side of fresh asparagus.

Very yummy and super duper easy!

Well, you can just shove that chunk o' cake straight through the computer screen!laugh.giflaugh.giflaugh.gif

Have fun in Croatia. There are worse things than cooking, traveling, eating & reading.cool.gif

My dh lays down very well when I limit the iodine but I keep slipping up on that. And the dh is miserable & everywhere when I misstep on the iodine. For instance, I had just healed all up & then I decided to get some coconut oil for it's beneficial factors as well as a butter substitute. And I got some See's gluten-free chocolates. I'm positive there is no cc going on. I began to break out all over & went looking for the cause. After some research I found coconuts are high in iodine & chocolate is too. So I've done myself in again. And I have some coconut flour sitting here waiting for me to try ---- not NOW. It may go bad before I can try it. These things were not listed on the thyca diet. I found them elsewhere along with summer squash which I love but that's out now too.

I have DDD also. Have you tried the epidurals? They help me immensely.

And from what I read on here I have hopes that with time on the gluten-free diet you will find much relief from your pains (all of them). So many tell of their pains getting so much better. I hope it will be the case for you also.

By the way, is there any way to join Pinterest without going through FB? I do not have an account nor do I want one but Pinterest looks, well, interesting! :)

Tonight we went to my mom's house for corned beef and cabbage plus potatoes and carrots. My mom also made a carrot cake from the Namaste spice cake mix, topped with a homemade cream cheese frosting and it was delicious :)

Definitely get vitamin D 25(OH)D.  Celiac Disease causes vitamin D deficiency and one of the functions of vitamin D is modulating the genes.  While we can survive with low vitamin D as an adaptation to living in a seasonal environment, the homeostasis is 200 nmol/L.  Vitamin D Receptors are found in nearly every cell with a nucleus, while the highest concentrations are in tissues like the intestine, kidney, parathyroid, and bone.  A cellular communication system, if you will. The vitamin D receptor: contemporary genomic approaches reveal new basic and translational insights  Possible Root Causes of Histamine Intolerance. "Low levels of certain nutrients like copper, Vitamins A, B6, and C can lead to histamine build up along with excess or deficient levels of iron. Iodine also plays a crucial role in histamine regulation."

I forgot to mention my suspicion of the high amount of glyphosate allowed to be used on wheat in USA and NZ and Australia. My weight was 69kg mid-2023, I went down to 60kg in March 2024 and now hover around 63kg (just after winter here in NZ) - wheat-free and very low alcohol consumption.

Hi Jess Thanks so much for your response and apologies for the long delay in answering. I think I must have been waiting for something to happen before I replied and unfortunately it fell off the radar... I have had an upper endoscopy and colonoscopy in the meantime (which revealed 'minor' issues only). Yes I do think histamine intolerance is one of the problems. I have been lowering my histamine intake and feeling a lot better. And I do think it is the liver which is giving the pain. I am currently taking zinc (I have had three low zinc tests now), magnesium, B complex, vitamin E and a calcium/Vitamin C mix. I consciously think about getting vitamin D outside. (Maybe I should have my vitamin D re-tested now...) I am still 100% gluten-free. My current thoughts on the cause of the problems is some, if not all, of the following: Genetically low zinc uptake, lack of vitamin D, wine drinking (alcohol/sulphites), covid, immune depletion, gastroparesis, dysbiosis, leaky gut, inability to process certain foods I am so much better than late 2023 so feel very positive 🙂

Hi and thank you very much for your detailed response! I am so glad that the protocol worked so well for you and helped you to get your health back on track. I've heard of it helping other people too. One question I have is how did you maintain your weight on this diet? I really rely on nuts and rice to keep me at a steady weight because I tend to lose weight quickly and am having a hard time envisioning how to make it work, especially when not being able to eat things like nuts and avocados. In case you have any input, woud be great to hear it! Friendly greetings.

I was not taking any medications previous to this. I was a healthy 49 yo with some mild stomach discomfort. I noticed the onset of tinnitus earlier this year and I had Covid at the end of June. My first ‘flare-up’ with these symptoms was in August and I was eating gluten like normal. I had another flare-up in September and then got an upper endo at the end of September that showed possible celiac. My blood test came a week later. While I didn’t stop eating gluten before I had the blood test, I had cut back on food and gluten both. I had a flare-up with this symptoms after one week of gluten free but wasn’t being crazy careful. Then I had another flare-up this week. I think it might have been caused by Trader Joe’s baked tofu which I didn’t realize had wheat. But I don’t know if these flare-ups are caused by gluten or if there’s something else going on. I am food journaling and tracking all symptoms. I have lost 7 pounds in the last 10 days.
