I generally buy the all-purpose mix. It is great for pizza crusts, breadsticks, rolls and sub rolls. I have thought about trying for a soft pretzel. I think it might work. It has been my experience that my reactions to gluten get more severe the longer I am gluten-free. It has also been true for my son as well. He was asymptomatic when he was diagnosed. Many times, powdered milk is added to a gluten-free recipe to increase the protein. Many of our flours are much lower in protein than wheat flour, and dry milk is a good way to make up the difference. I made an amazing chocolate cream pie from the Open Original Shared Link. My SIL is lactose intollerant, so I used soy milk for the milk and Tropical Source chocolate chips. It was really good! I had never made a chocolate cream pie before, but it's really not that hard. I was pleasantly surprised. -

It used to be believed that distilled alcohol was a source of gluten. This is now generally accepted to be untrue. Vanilla extract is made from distilled alcohol, and is gluten free. I can't speak to being addicted to other things, but studies have shown that gluten has opiate effects. The link below relates to gluten ingestion and autism. The opiate effects of gluten may help explain why it is so hard for some people to give up. Open Original Shared Link
