  1. I still have my moments when I get really frustrated and do seriously feel like I cook/bake all the time. I'm 6 months pregnant now, the good thing about that is that my sensitivity level has dropped off a bit. However, I'm facing a hospital stay and so I feel like I'm already thinking about prepping foods to have in the freezer for my stay and after I come...
  2. Yep. And 3/4 c should be less than the can... so, you might have some left over, but you won't have to buy more to make it.
  3. I've always heard around 6 months before trying dairy again, but each person is different. Healing time depends on how much damage has been done and how strict you are with the diet. At 6 months, my new GI would NOT do an endoscope on me to look for celiac because he said that chances of it being negative were pretty high. Whether I was fully healed or...
  4. I have learned my new thing for the day. Thank you Momma Goose You know, there's a lot of preservatives/additives in pickles... not just vinegar. Perhaps that is causing a reaction??? Just a thought...
  5. YAY!! Another lurker out of the shadows!!! Welcome to the site!! I love it, too! It's has been a huge source of info for me, and I hope it is for you too.
  6. 1,000 gluten-free Recipes by Carol Fenster I have a couple more, but that one is by far the best, IMO.
  7. I'm a little over 28 weeks pregnant, and the reflux officially starting kicking in about a week or so ago. At first I could trace it to food, but now it doesn't so much matter. I had the same with my first around this time. Any suggestions to easing it? I know that there are a lot of antacids that are safe to take, but my experience with them is that...
  8. It's hard to go wrong with pumpkin and chocolate
  9. My mom used to make this bread when I was growing up, and I finally decided to be brave and try to make it gluten-free. It's pretty simple, so it was easy to convert. Anyway, I made it this weekend, and everyone LOVED it! So, I thought I'd share. Enjoy!! Harvest Loaf 1 1/2 C gluten-free flour (I use Carol Fenster's blend) 1/2 t salt 1/2 t nutmeg ...
  10. My favorite way to eat polenta is to cut it into thin slices and fry it in olive oil. I had some for breakfast this morning I've heard of people putting tomato sauce (wouldn't work for you, but maybe some other sort of sauce) and some cheese on top and then either broiling it or baking it. I think I tried that once... but I just prefer it by itself...
  11. So sorry to hear about your son. Hope they figure out what's going on soon... seems like I've read those same symptoms can go along with ulcerative colitis. I'm sure they'll probably check for that, but you know how these docs can be.
  12. I think the question is really: Who here hasn't been diagnosed with IBS before being diagnosed with celiac? My doctor gave me a laxative and an anti-diarrheal in ONE appt... seems strange to give me two drugs that seem to work against each other. I just ignored him, continued on my gluten-free path and now I'm a year and a half in and feel like...

ARCHIVED So I Saw The Gi Doc

I had a pretty similar experience, too, with my first GI doc. I had pretty much given up and I had already figured that gluten was the issue and as ravenwoodglass said, I didn't need a doc's permission to continue. But I was having some lingering fatigue, and my GP said I really needed to see a GI to rule out any futher food intolerances/allergies, etc. She...
  14. Have you been tested for food allergies? It's different from celiac testing because whether you have or haven't been eating specific foods before the test doesn't matter. It might shed some light on what foods are causing you to itch.
  15. Hang in there! I just spent the weekend with my brother, who I'm SURE has celiac, he has even told me he wants to go gluten-free, but then he wants to tell me that barley malt in beer is ok... blah blah blah. He's in denial and is not ready to change, sounds like those celiac friends are the same. Keep educating yourself! For better reading, get Celiac...
  16. I'm 28 weeks with my second one. I really didn't have a whole lot of sickness with the first, and I've had even less with this one. The remarkable thing for me is that my stomach has overall been calmer and I've felt better since I've been pregnant than before I got pregnant. I know pregnancy affects every woman differently, but according to all the...
  17. Please do research this and let us know... A response to a post on wiki answers by someone who doesn't list any specifics or have any sort of credentials is not a sufficient answer for me.
  18. Thanks for posting the link! I knew it was coming and was hoping that I wouldn't forget to check into it.
  19. If you live in the states, it is more likely than not that caramel coloring is gluten-free. https://www.celiac.com/articles/182/1/Unsaf...ents/Page1.html
  20. I had terrible fatigue, also. It got progressively worse over about a year and a half. I had my thyroid checked a couple of times, and it always came back normal. After about 6 months, I started to realize that I wasn't dragging like I had been, and no longer was taking naps in the afternoon. It doesn't happen over night either way, although I wish the...
  21. Yeah, it's probably a cost thing. Because who are they trying to fool, like any of their other snacks were nutritious!!! Hello... how many calories do you think that black and white 'muffin' has in it, or the cakes they sell? That is so annoying. I went in the other day, and the cakes were frozen. I bought a kind bar instead. And Judy- that letter...
  22. You're not really missing much. I usually skip over the Food for Life brand; I haven't tried one that I found to be very... shall we say, palatable.
  23. I tried chebe once, and didn't much like it either. I used an egg sub, so maybe that was the issue. The taste though, to me, was kind of strange. Like you could taste the leavener... I don't know... just a bit off. I haven't found anywhere around here that carries it, so I haven't tried it again.

    ARCHIVED Kfc

To be fair, my mashed potatoes have flour in them, too... I had never heard of such, but I saw it on the Food Network. Make a sauce (add cheese if you want) and pour over the potatoes and mash them. I'll never make mashed potatoes the old way again... Certainly made me more aware of the places that flour/thickener is used.
