  1. I use baking soda with cider vinegar, or rarely, lemon juice instead of baking powder, I think the vinegar helps with the type of dense gluten free grains in the quick breads I'm making. I also use a dash of cumin and a dash of gluten-free Chinese 5 spice to cut the baking soda taste.
  2. A GIANT GLUTEN DEFLECTO SHIELD ? I WANT ONE OF THOSE. I HAVE NO FREAKING IDEA WHAT I AM HAVING FOR DINNER. WE NEED TO GO TO THE GROCERY AND IT'S FRIDAY NIGHT AND 7 O'CLOCK ALREADY. BUT WE HAD TACO SALADS FOR LUNCH WITH A SIDE OF BLACK BEANS.
  3. It sounds as if you are on the correct path. Just be aware that if you truly go and stay gluten free for a decent period of time, your body stops making antibodies to gluten if you are celiac, and you will not test out as such. However, since there isn't a test for gluten intolerance other than to see how one responds to a gluten free diet change, you...
  4. As time passes, celiacs on a gluten free diet tend to react more strongly to cross contamination or glutenings.
  5. Tapioca's base source root is being used for biofuel in some countries.
  6. Yup ! Porous cooking surfaces used for gluten need to be kept away or replaced for gluten free cooking. This includes, but is not limited to, teflon, cast iron, plastic tupperware type storage containers, plastic measuring cups and spoons, wooden/plastic cutting boards, colanders, rubber spatulas, wooden spoons, baking pans with cooked on residue that isn...
  7. I am sorry, but, I am sort of finding this funny..... the first rule of gluten free baking is that if you do a lot of substitutions, the results come out a bit differently than the original. The second rule is that some recipes on the internet, or even in cookbooks, as given, don't make something edible or have other major flaws. I have a vegetarian cookbook...
  8. Wonderful post ! Hope you continue to improve
  9. When they showed me my young adult mouth x rays it was quite a surprise to not only see that the front incisors were floating, but that the lower wisdom teeth would never be able to erupt, because they were trying to come in growing horizontal sideways from the back, instead of coming up vertical.
  10. Has the idiot Doctor proscribed you any thyroid medication yet, and if so, is it gluten free ? Are you taking any over the counter acid blockers like pepcid ? They have given me some strange side effects, which my eye doc finally figured out (!) because they can cause minute little quick changes in blood flow in the brain. Have you ever had ataxia, a...
  11. I am a dental freak, in that I have adult top incisors front which have had "no roots" since at least the very early 1980's, when my dentist at the time discovered this when I was finally considering getting braces as an adult to correct the bad bite. No chemo was involved. He was one of those wonderful old- fashioned dentists, you should have heard him...
  12. You may want to limit the "eating out" routine, until you have this situation diagnosed. Do you have an inhaler, in case your breathing constricts? (wheat can cause asthma in some people) And sorry you found out that restaurants can vary on how they handle cross contamination. Scary. And thank God for antihistamines.
  13. Some of the "merely" gluten intolerants are going to be people who "missed" getting the official celiac diagnosis...... and there is going to be bone loss. The stereotype of the typical celiac always being thin is not true either (think insulin resistance, polycystic ovaries, and thyroid problems and food cravings for carbs and sugars, caused by malnutrition...
  14. Hey, LFitts, hang in there. Paper towels, paper towels, paper towels ! You may, in the near future, be making yummy gluten free cakes, with your new, dedicated gluten free mixer and baking pans. There is this demand, you know, especially for "mixed" families and special occasions. Plus your daughter might just be reacting to something like soy flour ...
  15. Had to go grain- free in the beginning, did everything with nuts I ground myself, and at first dairy free, then a tiny bit of hard cheese, but after a nearly week - long storm damage power outage around 2008(?), realized that it would be easier in an emergency if I could tolerate some sort of packaged foods, so I gradually added in things like rice cakes...
  16. Hi. You seem to be a bit low on "good fats" on that sort of restrictive diet. If you take out that much starch, you MUST add in fat, or you're going to feel very, very tired and be crashing a lot, especially if you are a male. I learned from sharing gluten free meals with my spouse that I must carb-load him if we are about to do anything strenuous, or...
  17. Yet..... only self-validation.... therefore, to thine own self be true. This trendsetting thing requires patience!
  18. This stuff can be made out of an amazing number of things: Open Original Shared Link
  19. Oh, hello, GIG person above ^ ! re: 3) the "grain dextrins" - Noticed the link to the "Fruitrim" ingredient, STILL does not specify what the grain product it is that they call a dextrin, and mix with the fruit juice to create this ingredient, other than they claim it is NOT corn. Bad sign. If it is not corn, and it is a grain, that leaves the other...
  20. No. These are for formally diagnosed celiacs. They don't acknowledge gluten intolerance. Secondly, it's insane to ask people who don't have problems with willingly complying with a gluten free diet, to further risk their health and continue to create severe auto-immune damage, because a trial would mean that some testers would be getting a placebo, not...
  21. Try doing internet searches on gluten intolerance at PubMed using the name of Dr. Mario Hadjivassiliou, who is in the UK and who has studied older people with "unexplained" ataxia and found them to have gluten antibodies (and undiagnosed gluten "problems" or celiac.) I didn't comment on this thread from 2010, but I just wanted to say that since the...
  22. In my opinion, (and experience) a doctor who has made up his or her mind before any tests have been done that "It could not be celiac" is completely worthless, because they will then never change their minds as they run other tests looking for other things, and they do not listen. With that being said, if the doctor wants to do a biopsy (properly, with...
  23. My spouse can switch back and forth between going gluten free for days at a time, even a week or more at a time, then eating some out at restaurant or business meal, with no problem. This is because he doesn't have a gluten problem. I'm the one with the gluten problem, and I can't do that at all. He also can eat oatmeal, and I can't. Feel free to use...
  24. I loathe the modern styles of jeans, which do_not_fit. I have to wear some sort of heavier- duty pant outside because stretch knits just don't go along with dirt, mud, and grass/hay detritus. But the second I come back in the house, off they go and get replaced with yoga pants. It is a combination of my body shape is difficult to fit anyway, and the modern...
  25. It is not unusual to become more sensitive as one stays on the gluten free diet longer and longer. I don't eat anything "processed" after a potential cross contamination gluten exposure. The best way to track down a problem is, if you are not eating the same thing(s) every day, is to keep a food diary and note down everything that you are eating and taking...
