ARCHIVED Favorite Gluten Free Treats?
ksymonds84 replied to solarglobe's topic in Gluten-Free Foods, Products, Shopping & Medications
I bake a lot of stuff in one weekend and then freeze all of it, so I can have it when I want some lol. Now, intolerance to corn is like being glutened? I have had a lot of problems and I know I am gluten-free, so I cut out soy and that didnt help. I wonder if it is corn. Most weekends I have corn tortillas with eggs and salsa. And the above link... -
ARCHIVED A Little History- Hope Not Too Long
ksymonds84 replied to ranger's topic in Coping with Celiac Disease
Hello and welcome! Its wonderful that you discovered on your own your gluten intolerance. You may have tested (for now) as negative for Celiac but with your positive response with the diet, shows you have problems with gluten and are at least gluten sensitive. There are many articles about gluten sensitivity on the main page of this site that you could... -
ARCHIVED Pace Salsa Con Queso
ksymonds84 replied to Lisa's topic in Gluten-Free Foods, Products, Shopping & Medications
Cambell's told me they would send me a list as well in a week and all I got was coupons (1.00 off) and no list! Hope you are more successful. BTW the person I talked to said no Pace product is gluten free My husband is making my salsa and spaghetti sauce now though, as soon as we have it tweaked I will post the recipes. -

ARCHIVED Is Fondant Gluten Free
ksymonds84 replied to jennyj's topic in Gluten-Free Foods, Products, Shopping & Medications
We do lots of weddings in one of my restaurants. Fondant makes a beautiful wedding cake but guest tend to not eat it as its not very tasty, maybe she can make yours butter cream instead -
I eat there occasionally when I am out by the mall and its the closest restaurant around. I feel safest with the rack of ribs and as of yet have never been glutened by them (I am very sensitive). You have to order a whole one though to fill up because they are a chain and use cheaper cuts of meat and their ribs barely have any meat on them.

ARCHIVED gluten-free & Dairy Free
ksymonds84 replied to AshleyS's topic in Related Issues & Disorders
Hi Ashley, as I have said on another post, I've narrowed down that Xantham gum as a problem for ME. I am not allergic to corn and can eat corn chips and tortillas with no problems. The only thing that I can think of is that I am very allergic to mold and xantham gum is produced by a process involving fermentation of glucose or sucrose by the Xanthomonas... -
Hi Susan, this is just a thought but after my diagnoses, I ate more and more dairy (since it's mostly gluten free) and started getting eczema on my hands. I no longer do dairy except on Christmas eve, I ate my mom's famous cheese ball and woke up to nasty rash on the hairline of my scalp. Sadly, as long as I don't do dairy, I am fine. May not pertain to...

You are correct but fortunately only for some celiacs. Xantham is grown on corn so there is also the allergy to corn connection. I am not allergic to xantham but it does cause me intolerance problems similar to gluten. It took me tons of trials and errors to discover the connection to xantham because its in almost all gluten free goodies so one would assume...

ARCHIVED Glutino Products : Reaction?
ksymonds84 replied to raisin's topic in Gluten-Free Foods, Products, Shopping & Medications
A shot in the dark, but what about xantham or guar gums? It took me months to finally nail down that xantham gum is a problem for me. -
ARCHIVED I Want To Own A Gluten Free Rest.
ksymonds84 replied to puggirl's topic in Gluten-Free Restaurants
Yes definitely do tons and tons of research. My husband and I own two restaurants (both have gluten free menu's) and have been doing restaurants for over 20 years. Restaurants are the toughest businesses to own. We see many well intentioned people open restaurants and within 6 months go bankrupt. There's a lot more to them than just having good food.... -
ARCHIVED Guar Gum Versus Xanthan Gum
ksymonds84 replied to Dyan's topic in Gluten-Free Recipes & Cooking Tips
You can also use ground flax seed or coconut flour. Both will exchange on a 1:1 ratio. I've used the flax seed and it gives more of a nutty flavor to your baking. Haven't tried the coconut flour. I've also heard that sweet potato flour will work too. Guar Gum and Xantham gum both give me bathroom issues -
We just got one here in Colorado Springs too! I met the local owner when we were all showing off our goods on a restaurant segment on our local news station. This owner told me how he had the local celiac group in to train all his employees on proper handling to prevent cc. I was very impressed. He brought gluten pizza's for the show though so haven't...

ARCHIVED Reeses Warning
ksymonds84 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Okay call me stupid. I knew that there could be a problem with the mini's in all candy's but...I bought the reeses holiday bells for my daughter and after two glasses of wine, I thought what the heck and ate two. A couple hours later I was in serious agony. I didn't have the original wrapper anymore to read ingredients. All morning long needing imodiam... -

ARCHIVED What Could I Be Reacting To?
ksymonds84 replied to IChaseFrisbees's topic in Gluten-Free Foods, Products, Shopping & Medications
I completely understand trying to figure out what ingredient you are reacting to. I've been reading more and more about how people are reacting to xanthan gum and carrageenan. There is an interesting article on xanthan gum on the homepage of this website that you may want to read. I've stopped eating gluten free breads, goodies, soy, yeast and anything... -
ARCHIVED Shoppers Guide And Canning Question
ksymonds84 replied to TiredofTums's topic in Gluten-Free Foods, Products, Shopping & Medications
I have both Cecelia's and Triumph's shopping guides. I find them both very helpful. Alway's check ingredients even if listed in the book because ingredients do change, such as the cambells pace and prego. Cecelia's has a product alert on her website and will tell you when to remove items. I and a bunch of others emailed them about the cambell's change... -
ARCHIVED Anyone Else Tired Of "celiac" Vs "gluten Sensitive"?
ksymonds84 replied to mhb's topic in Related Issues & Disorders
Ali, Please don't get me wrong, I agree with you on many of your points and believe your posts are a great help to those that do not respond to just the removal of gluten alone. Dr. Lewey here in Colorado Springs, starts his celiac patients off with a probiotic if they are having the gi symptoms. Also, a group leader for a local celiac support group... -
ARCHIVED Campbells Soup And Swanson Broth Alerts
ksymonds84 replied to LDJofDenver's topic in Gluten-Free Foods, Products, Shopping & Medications
I called Cambells and they told me that because of an ingredient change ALL pace and prego are no longer gluten free. I agree with you about the wheat but perhaps its barley in the natural flavorings? Prego is a sweeter sauce, just guessing here. Or maybe they just decided not to deal with saying they are gluten free (not smart on their part). They said... -

ARCHIVED Anyone Else Tired Of "celiac" Vs "gluten Sensitive"?
ksymonds84 replied to mhb's topic in Related Issues & Disorders
YES. My brother in law's only symptom was DH and some neuro symptoms. Negative celiac panel and negative endoscopy and biospy. He only found out he was celiac through going to a dermatologist who did a biospy of his rash and discovered DH. He now gets digestive problems if he accidently ingests gluten but perhaps its because his body no longer recognizes... -

ARCHIVED Dull Ache / Burning / Pain In Testicles Associated With Celiac?
ksymonds84 replied to bfrange's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hello, My 23 year old son had your issues a few months ago and it was on his left side too. He looked it up online and got super scared over things he read and stayed up all night. I urged him to call the doctor right away and he got in that day. The doctor didn't see anything to be concerned with and told him, for some reason that can just sometimes...
