This can vary greatly from person to person. Some people have symptoms right away that last for hours, some don't get symptoms for hours or even days, and some people report their symptoms lasting for weeks. -

Some people point out that you may forgo possible follow up treatment for celiac disease, but most doctors don't freely offer this--mine have never done so, and I've had to ask for any of the follow up checks to see if my antibody levels went down, etc. I've never been offered a follow up biopsy to see if my gut ever healed, but I'm reasonably sure that it... -

If your symptoms are improving on a gluten-free diet, and you’re good with staying on the diet without a piece of paper that tells you it’s required, I don’t see a need for the diagnosis, do you? Eating gluten daily for 6 weeks or more could cause you serious issues. -
I agree that nutritional deficiencies could be an environmental trigger of celiac disease in susceptible individuals with the genetic markers for celiac disease. It may also explain non-celiac gluten sensitivity which is now recognized as a different condition. However it is unclear whether correcting the nutritional deficiencies could reverse either condition...

Yes, but if you have celiac disease it can take an average of two years for your gut to fully heal, and it will only do so if your diet is 100% gluten-free. How long have you been taking the acid reducer? In general they are over-prescribed, and can cause other health issues when taken long-term, like mineral deficiencies. -
Those are definitely high numbers. I assume your next step would be to start on a gluten-free diet, but be sure to discuss your results with your doctor first. Let us know how things go. It's unfortunate to hear that you have to go through a gluten challenge. I seriously doubt the people who administer the vaccine would have an answer for you, but given the known risks associated with getting covid-19 I would still proceed with the vaccine. Many people with celiac disease avoid sugar because it can contribute to candida/SIBO overgrowth, as well as other things. I was diagnosed with heliobactor pryori at the same time as my celiac diagnosis. It took a while, but cutting out sugar an important part of my recovery, along with a gluten-free diet.

It looks like you have a strong positive blood panel for celiac disease, and you have the genetic marker as well, so your next step may be a biopsy, although many doctors are diagnosing it without a biopsy if the blood test results are high enough. Your doctor may want you to continue to eat gluten daily until a biopsy is done...
