BTW, your trigger sounds remarkably like mine. My kids both have the gene as well, one is gluten-free and one isn't, but it's time he got re-tested (his last blood tests were negative, but that was years ago). I have DQ2 and DQ8, one from each parent! In any case, I'm always amazed to hear that even back in 1967 there were some amazing doctors who knew about this. Thanks for sharing!

It seems unlikely that celiac disease would be related in any way to anaphylaxis, however, I can say that after I went gluten-free my chronically clogged nose, which was from both pollen and food allergies, cleared up--this hadn't happened ever without allergy medicine. This makes me wonder if the fact that my immune system was so busy overreacting to gluten...

Thai food is usually gluten-free, but you do need to speak with the chef to be sure. If they are authentic and from Thailand, the chances are much higher that many of their dishes will be safe. Unfortunately this seems to happen too often. You can get a big jump on this by learning about the gluten-free diet, and going gluten-free now. I see no reason to wait for two months if you're diagnosis is now official, which sounds like it is in your case. This article is a good starting point:
