  1. The average time is 2 years, and it could probably be faster if people knew about things like hidden gluten in food additives, cosmetics, etc., and if they took dietary supplementation seriously and tested for vitamin & mineral deficiencies. In my case I think it was a combination of not supplementing right away, and working at a desk too much,...
  2. I've had some bad years! Although my recovery seemed to be dramatic, that was just in comparison to how sick I had been before going gluten-free. There was an ~10-15 year period in my life afterwards where I have chronic stiff necks, major knots in my shoulders and neck, and around once per month I would wake up with such a bad stiff neck I could not turn...
  3. 06/14/2021 - Professor Elena Lionetti and a team of research colleagues at the Department of Paediatrics at the Marche Polytechnic University, Ancona, Italy recently reported that mass screening of school age children has led to significantly...
  4. You are not alone, and there are many celiacs who report some of the things you're going through. Here is a summary of a recent study on dating and celiac disease. I think getting your diet under control, and getting healthy is every celiac's first priority, but learning how to deal with various social relationships while maintain a gluten-free diet isn't...
  5. I highly doubt strawberries would contain any measurable gluten, even IF they used straw under them (if heard of home gardeners doing this, but have never seen it done here in California in commercial strawberry fields...and even IF they did it, straw does not contain gluten). Strawberries are a very common fruit allergy which can be quite severe in some...
  6. I would check into a possible corn intolerance, as Barilla is made in a dedicated gluten-free facility.
  7. Hello @gf_kitchen, and welcome to the forum. Is it possible you have a corn intolerance or corn allergy? I ask because Barilla is probably the largest gluten-free pasta manufacturer in the world, and their product is made in a dedicated gluten-free facility, so it's very doubtful that it would contain any gluten.
  8. Was your reaction different than you have with gluten? Nut allergies are very common, as you probably know, but an allergic reaction is very different than the reaction that a person with celiac disease has with gluten, which is an autoimmune reaction. If the reaction was more like a gluten reaction, I wonder if it's possible that you got some gluten in your...
  9. Celiac.com 06/12/2021 - We've been eating more fish lately, and that means we've been looking for nice side dishes to round out the meals. This recipe for English style mushy peas caught our eye, and has become a regular when we make our...
  10. We summarized this research as well, and it certainly means that better tests need to be developed:
  11. The pain I had was primarily in the middle-right area of my abdomen. How long have you been gluten-free, and is any gluten getting into your diet? Have you tried eliminating other things like cow's milk?
  12. Interesting article, and I've seen other studies on too clean environments. The takeaway from this one is "Ultra-sterile living conditions may contribute to common astronaut illnesses, including gut, skin, and immune-system problems." Let your kids play in the dirt!
  13. I was referring to a possible risk factor for celiac disease based on elevated vitamin D levels:
  14. Hoisin sauce is used in some Chinese and South East Asian recipes, and some may be gluten-free, but not this one! Besides soy sauce, beware of oyster sauce and hoisin sauce, as some contain gluten.
  15. Welcome to the forum! I do think it would be worth getting a blood test for celiac disease in this case, and agree with @trents that many people have few noticeable symptoms. Have you had your iron and vitamin D levels checked? Low levels are another possible symptom that lead many to a diagnosis (as well as fat in stool). You would need to keep...
  16. Celiac.com 06/11/2021 - I'm a big believer in soups that feature rice and vegetables. This French Spring soup is a delightful marriage of fresh spring vegetables, butter, cream, and rice, that will help put a spring in your step, and a...
  17. One thing that seems to pop up here over and over is casein/dairy intolerance. Have you tried going dairy-free for a while to see if it helps?
  18. Welcome to the forum! We have a huge recipe section here: /celiac-disease/gluten-free-recipes/ As well as a dedicated topic in our forum: https://www.celiac.com/forums/forum/27-gluten-free-recipes-cooking-tips/
  19. I do find it interesting that there may be a correlation with vitamin D3 supplementation and rates of celiac disease, and it's certainly worthy of more studies. If there is an association it would be important find out. I've always wondered if certain vitamin deficiencies could trigger celiac disease. @Posterboy has posted a lot about various vitamin and...
  20. This is an interesting question, and this site indicates that sterols can be made from "wheat bran and wheat germ," so they could possibly contain gluten. https://www.healthline.com/health/high-cholesterol/statins-vs-plant-sterols#plant-sterols
  21. This article talks about scalloping: "The characteristic appearance of the surface of the small intestine in celiac disease includes superficial ulcerations that are commonly linear, flattening of the folds, notching or scalloping of the folds and a mosaic-like pattern. However, the surface may appear normal and only under microscopic examination of...
  22. If you are doing an endoscopy to confirm diagnosis of celiac disease you need to eat 1-2 sliced of wheat bread daily for at least 2 weeks before the test, otherwise you could get false negative results.
