ARCHIVED More Sensitive Now?
dilettantesteph replied to camprunner's topic in Coping with Celiac Disease
My 12 year old son and I were diagnosed at the same time. We both seem to be getting more and more sensitive and unable to eat things that we used to eat just fine. It has been 2 years now and I'm not sure whether we have seen the limit to our low gluten threshold. I sure hope that we have. The other food sensitivity that we have is to oats. I haven... -
ARCHIVED Not Sure Where Gluten Is Coming From
dilettantesteph replied to GFM's topic in Gluten-Free Foods, Products, Shopping & Medications
I think that my son and I have been glutened by envirokidz. It was a chocolate rice one, I think, that was labelled gluten free. I am very sensitive though. -
ARCHIVED Talk About Being Sensitive.
dilettantesteph replied to txplowgirl's topic in Coping with Celiac Disease
My son and I are also very sensitive. We were still getting glutened in our house just from my daughter and husband consuming gluten and having it in the house. I didn't do any gluten food preparation or dish washing or anything. We had separate areas in the kitchen for gluten and non gluten, but we were still getting sick. I don't know how it could... -
When I contacted Amy's to tell them that their rice pizza has glutened my son, they told me that it had been tested to contain less than 5 ppm gluten. The tests that they use test to 5 ppm. That is under 20 ppm. Crispy Green told me by e-mail that they test to 5 ppm, and Tropical Source on label says that they test to 5 ppm. The New Grist beer company...

ARCHIVED Do I Need To Be As Worried About C.c. With Soy, Corn, Etc As Gluten?
dilettantesteph replied to breavenewworld's topic in Coping with Celiac Disease
How did you determine that you had those other intolerances? I found out that I am sensitive to very small amounts of gluten. I think that this is genetic. I found out that reactions that I was having that I was told were intolerances were actually due to traces of gluten. I found out that if I could get these items in a pure form, that I didn't react... -
ARCHIVED Bread Making Troubles
dilettantesteph replied to DMarie's topic in Gluten-Free Recipes & Cooking Tips
I don't know if you are already doing this, but I found that it made a big difference to mix the ingredients in you mixer for a full 5 minutes. That might cause the gums to suck up some of that extra water too. -
I roll the dice every time I eat anything processed. How does gluten free mean up to 20 ppm gluten?

ARCHIVED Any Advice Would Be Greatly Appreciated!
dilettantesteph replied to mlr3475080's topic in Doctors
Though I can eat some cheese, I can't eat butter. I don't know why. I have been glutened by mushrooms before. I am sensitive to very small amounts of gluten. I think that sometimes mushrooms are grown on wheat, barley, or oat straw and the tiny amount of gluten or avenin that can get on them that way seems to be enough to make me sick even though I did... -
ARCHIVED Fatigue, Hunger And Blurry Vision
dilettantesteph replied to karlsthlm's topic in Related Issues & Disorders
I get blurred vision when I eat trace gluten by accident. -
ARCHIVED I Want To Hear Some Good Healing Stories!
dilettantesteph replied to breavenewworld's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I stopped doing restaurants completely. For travel I got a cooler that can plug in to a car or wall. Now I see that they have come out with a travel microwave. It is a bit expensive at $300, but I'm very tempted. -
ARCHIVED Hypothyroidism Or Super Sensitive Gluten Reaction?
dilettantesteph replied to butterfl8's topic in Coping with Celiac Disease
I found inhaled gluten bothered me for longer too. I think that it gets stuck in the hairs (villi) between your nose and stomach and gets absorbed by the mucous membranes and brought down to the stomach for a long time. I got sick for three weeks from inhaled gluten. At that time my normal gluten reaction lasted only a week. -
My son reacted to their rice pizza once. I called them and it had been tested to contain less than 5 ppm gluten. I was disappointed to find out that my son is so sensitive to trace levels of gluten.

ARCHIVED I Want To Hear Some Good Healing Stories!
dilettantesteph replied to breavenewworld's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I've been gluten free for two years now and I am preparing to do a mini triathlon this coming summer. Yesterday I rowed 8,000 meters and then ran 2 miles. Before diagnosis I was having uncontrollable diarrhea and pooping in my pants a couple of times a week, blurred vision, swollen joints, fatique, depression, etc. I could only exercise very mildly. I... -
ARCHIVED Nuts Without Cross Contamination?
dilettantesteph replied to bethmon's topic in Gluten-Free Foods, Products, Shopping & Medications
I have tried washing too. It seems to work if the item isn't very gluten contaminated to begin with, but you have to wash with soap and very carefully. -
ARCHIVED Kind Bars
dilettantesteph replied to taweavmo3's topic in Gluten-Free Foods, Products, Shopping & Medications
I am very sensitive and react to oats, and I do react to Kind bars, but not too badly. -
ARCHIVED Jules Gluten Free Flour
dilettantesteph replied to aprildawn700's topic in Gluten-Free Foods, Products, Shopping & Medications
Sorry I took so long to answer. I don't come on here very often. I bought a manual grain mill, Country Living. It's not for everyone to manually grind their grain. I really like it though. The first mill came tested with flour. They included a little package of the flour so I could see how fine it was. I freaked when I saw that in my gluten free house... -
ARCHIVED Blue Diamond Almond Cheese Thins Crackers
dilettantesteph replied to Glamour's topic in Gluten-Free Foods, Products, Shopping & Medications
Neither. Most processed foods bother me. -
After eating a serving of gluten free oats I was sick for 2 months. I wish that I had paid attention to the warning on the label about some celiacs being sensitive to avenin, the protein in oats that is like gluten. I think that I react worse to oats than I do to gluten. Now I avoid products made by gluten free companies who use gluten free oats. Bob...

ARCHIVED Jules Gluten Free Flour
dilettantesteph replied to aprildawn700's topic in Gluten-Free Foods, Products, Shopping & Medications
Maybe a new flour mill would be a good idea? I got one recently and it is so much better than the coffee grinder that I was using. I make my own flour blends and that way I can visually inspect and wash the grain first. I have pulled out grains that looked like gluten from millet and corn. If Jules is really pure enough for a super sensitive, it would... -
I did the same thing. A full size Butterfingers. They are supposed to be gluten free, but I am still feeling it! I hope I manage to resist next Halloween!

ARCHIVED Excessive Burping?
dilettantesteph replied to MDRB's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Excessive burping for me is a definite sign of trace gluten contamination. I have to avoid a lot of those gluten free foods. -
ARCHIVED Feeling Awful Despite The Gluten-free Diet.
dilettantesteph replied to Ephemeroptera's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
In my case, I had to get much more rigorous with my gluten free diet before I could feel in good health. I cut out most processed foods. -
ARCHIVED Amaranth Flour
dilettantesteph replied to JJ-'s topic in Gluten-Free Recipes & Cooking Tips
I've eaten puffed amaranth cereal and it did not have this smell or taste. It sounds like it has gone bad. -
ARCHIVED What Is The Best Evaporated Milk Substitute?
dilettantesteph replied to KahleFamily's topic in Gluten-Free Recipes & Cooking Tips
This won't help if it is a dairy intolerance, but I used heavy cream and it was delicious. -
ARCHIVED Gluten Free Diet And Relief Of Chronic Joint Pain
dilettantesteph replied to schicker45's topic in Sports and Fitness
My joint pain improved - went away, but it took a long while. I can't remember exactly how long anymore. It's been two years now. Hang in there.
