ARCHIVED Dictating What Others Can Eat Around Me?
dilettantesteph replied to Cypressmyst's topic in Coping with Celiac Disease
You smell it because particles bind into receptors in your nose. If you smell it, there are particles in the air. Yes, it isn't the neurological response of noticing the scent that gets you, it is the particle itself. The levels are very low at that point and only the most sensitive will react. If you smell it, it is there. -

				ARCHIVED Recent Upgrade Completed
dilettantesteph replied to Scott Adams's topic in Board/Forum Technical Help
Plus, I had finally gotten around to posting a picture awhile ago, and now it's gone and I have to go through that all again. Maybe that big ugly NO Avatar sign will speed up the process this time. -

ARCHIVED Questions For Those That Have Done An Elimination Diet
dilettantesteph replied to cahill's topic in Food Intolerance & Leaky Gut
I found an elimination diet very helpful. Even now I only add one food every week. In a way I am still doing an elimination diet. If chicken bothers you, turkey probably will too. I'd try lamb. Are you eating Lundberg rice? Some others can have wheat cc. I think I read here about someone finding a wheat berry in their rice. -
I get GERD as a sign of glutening. It helped me to cut down on processed foods.

ARCHIVED Wine Barrels Sealed With Flour Paste
dilettantesteph replied to monkeydragon's topic in Gluten-Free Foods, Products, Shopping & Medications
I recently reacted to a wine too. This kind of information is very helpful. Instead of having to give up on wine completely, I can know what questions to ask to try to find a wine that will be safe for me to drink. Thank you -

ARCHIVED Am I Being Glutened Or Could It Be Something Else?
dilettantesteph replied to HS7474's topic in Coping with Celiac Disease
I am very sensitive to low levels of gluten and can't tolerate much in the way of processed foods. Early on, when I wasn't quite so sensitive, I wasn't able to find a gluten free cereal which I could tolerate. Soy could be a problem, as well as the instant breakfast. Why don't you try avoiding those three things for a few days and see if it makes a difference... -

ARCHIVED Natural Disasters - Does Anyone Else Worry?
dilettantesteph replied to ElseB's topic in Coping with Celiac Disease
I've been in an earthquake. The Northridge quake. We were told to stay home for a few days while they got things going again. There were some fires, and power (street lights) were out and water was out. I was glad to have bottled water, food, and a camp stove on hand so that we were fine. That is except for all the broken stuff that we had to clean up... -

ARCHIVED Celiac And Vulvodynia And Vaginal Issues
dilettantesteph replied to fiore's topic in Related Issues & Disorders
Your problems might be caused by reaction to low levels of gluten cc. Try a whole foods diet. Don't eat any processed foods, just meats and produce, only fresh spices. Wash everything. Only eat in shell nuts that you shell yourself. Buy your meat packaged in the meat processing facility, not repackaged by the store. See if that helps. You may be a... -

ARCHIVED Gluten Free But Still Acid Reflux?
dilettantesteph replied to Pal Mom's topic in Coping with Celiac Disease
My son continued to have acid reflux problems until we eliminated processed corn from his diet. He still does fine with corn on the cob. Also with corn that I sort and wash. I believe that he was having cc problems with the processed grains. -
Many celiacs do better without any grains. That is probably due to cross contamination which has been shown to be present in many studies. A recent study often mentioned here was done by Tricia Thompson. I, personally, have found many gluten grains in my gluten free grains as I sort them.

ARCHIVED Processed On Equipment That Also Processes Wheat
dilettantesteph replied to quincy's topic in Gluten-Free Foods, Products, Shopping & Medications
I should have qualified my comment by saying that I am extremely sensitive and can't eat hardly any processed foods. Kinnickinnick really does try their hardest. Their foods are certainly among the most gluten free. I'm sure that they washed the equipment very well if they spent 4 weeks at it. I just don't think that it is possible to get it clean enough... -

ARCHIVED Processed On Equipment That Also Processes Wheat
dilettantesteph replied to quincy's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm with you, Peter. That just made me think, "No wonder I reacted to Kinnikinnick's food!" How on earth could you get that big mess clean enough for the most sensitive? -

ARCHIVED Can A Colonoscopy Diagnose Celiac?
dilettantesteph replied to glut'nfree's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It sounds to me like you got your diagnosis by response to diet. It might harm your husband to eat enough gluten to get positive test results. -

ARCHIVED Processed On Equipment That Also Processes Wheat
dilettantesteph replied to quincy's topic in Gluten-Free Foods, Products, Shopping & Medications
I couldn't get your link to work. Whether or not you need dedicated equipments seems to depend on how sensitive you are to low levels of contamination. -

				ARCHIVED Does Citrus Aggravate Dh?
dilettantesteph replied to itchy's topic in Dermatitis Herpetiformis
I stopped buying citris when I found out that most of them are coated. It is written on the box. That coating seems to get me. -
I do believe that I have reacted to distilled vinegar and even apple cider vinegar. When I make my own, I don't react to it. I'm sure that the levels of gluten are much less than 20 ppm so that it is certainly gluten free for all but the most sensitive to low levels. I also react to products processed in a facility which also process gluten containing...

I got glutened by ice water in a bar. I was sitting at the bar and should have known better. I saw the big open tub of ice right next to the beer tap and how the glasses go through this not very thorough cleaning system. There could easily have been traces of beer somewhere. I didn't eat anything there, or anything different at home.

				ARCHIVED Seeking Advice/insight
dilettantesteph replied to concernedmamma's topic in Parents, Friends and Loved Ones of Celiacs
1) Negative blood tests don't mean no gluten in diet. My son tested negative after being badly glutened by sandwich crumbs in his school cafeteria. He was sick for three weeks. I tested negative after a year when I was still getting a lot of low level gluten contamination which I later removed from my diet with increased health. 2) Behavior problems... -
I had two children while plenty sick with celiac but still undiagnosed. I didn't have any problems with the pregnancies which were celiac related. I had problems with my first child from a poorly performed amniocentesis procedure, but that's it. With that child I also ate lots of gluten as they kept telling me that I had to gain more weight. Certainly...

ARCHIVED Symptoms You Never Realized You Had
dilettantesteph replied to sandsurfgirl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'll join you guys and try to come up with a list. It's been over 3 years now. Some of these things didn't go away until I got very gluten free. I eat almost no processed foods or produce with waxy coatings. I also sort and wash all my grains. Uncontrollable D. I literally went in my pants several times a week even if I stayed within 20 yards of the... -

ARCHIVED Symptoms You Never Realized You Had
dilettantesteph replied to sandsurfgirl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes, I had an amazing number of symptoms which cleared up gluten free and which come back when glutened. I had no idea that I was so sick until I got better. These symptoms had been creeping in gradually my whole life. Also my father had them. I thought they were inherited traits, age related, whatever. I can't even remember them all to list them all... -

				ARCHIVED Sensitivity Levels Among Us
dilettantesteph replied to SuperMolly's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I wonder the same thing. I am sensitive to the 20 ppm acceptable limit. Does that make me more or less likely to have hidden damage? -

				ARCHIVED Problems With Support Groups
dilettantesteph replied to Wise's topic in Introduce Yourself / Share Stuff
I am sorry that you have had this problem. Also discrimination due to being Latino(a). In my experience many of the self diagnosed people are those with the most serious symptoms who take the diet most seriously. Many are not diagnosed because they were too sick to stay on gluten while waiting for a biopsy. As soon as they had an idea of what the problem... -

ARCHIVED Why Do We Get More Sensitive To Non-Gluten Foods After Going gluten-free?
dilettantesteph replied to GFshay's topic in Coping with Celiac Disease
My personal experience is that a lot of foods have gluten cc. When I look for other sources or grow it myself, I find that I can eat it after all.
