  1. I don't know the science. I am one of the weight gainers. I can only come back to my theory that overall inflamation is holding me back. The more I discover what foods bother me, the better I feel, and the more my weight creeps down as well as my blood pressure. I know it is also tied into insulin levels. I know I still need to cut down more sugar out...
  2. I, too, would ask the dr to write a note for her stating that she is on a gluten free diet. That should be enough. Personally, I would get her into a different day care. I think if they have that attitude they will expose her carelessly in other ways. If this is affiliated with the military, can she get some help by a push from a senior officer's wife...
  3. Many of your symptoms could be connected to celiac, but then celiac has something like 200 possible symptoms.Heavy people can indeed have celiac but inability to gain weight is more common. And as you know some of your problems might be the result of the extra weight. There is about a 34% of persons with celiac disease who are overweight as opposed...
  4. Jason, I think you need a dog! A dog loves you unconditionaly and that is a confidence builder. Also dog people love other dog people. Out with your dog you will see people smile and want to engage you. It's a great ice breaker. Seriously, any woman who would write you off because of a special diet is not really worth your time, is she? Put out...
  5. I don't see any other vegetables in your list. Can you not eat steamed vegetables? What about beans and nuts? Seems like you are very limited and that would help you. Can you juice foods like carrots and parsley? These are very nutritional. Also fermented cabbage is very good for digestion.
  6. For you students, I didn't see any eggs on your food list. Egg is about a perfect food nutritionally. It's also easy to cook and transport and can fill out any meal. A bunch of hard boiled eggs makes a quick portable snack and a hit of protein will really help you with the hunger and fatigue you're having. I only start feeling envious of other peoples...
  7. That is a problem. But it doesn't stop all carbs just has you focus on certain ones. I was only saying some carbs are a problem for me. But you could look at a few pages of the thread and see what you think. Maybe you could put some of your problems to them and see what those folks say. The reason I mention it is many of the people who contribute...
  8. I use coconut milk but have to restrict it because I react to too much guar gum. It can have a laxative affect. I haven't found one locally that doesn't have the guar gum.
  9. As the PP said the fermented cabbage is excellant for the gut. You could look over the SCD diet that has a long thread under leaky gut. It is reported to be good for the conditions you have and the thread can tell you all you need to know about it. I think it would do you good. I don't follow it to the letter but I have improved my health with what I...
  10. I am not an athlete but I enjoy watching athletes. Does that count? I also gained weight while on gluten and have had high blood pressure for about 7 years, on meds for it. But this winter, I got stricter with my diet and cut out all grains except some rice every week and occasional corn. I increased my magnesium also and my blood pressure is now...
  11. Dairy free is the next logical step. It's easy to do, easier than going back to your dr and trying more drugs, and you will have your answer in short order.
  12. What a relief for you to see such a positive change in her! Good job, mom!
  13. His extreme reaction to the gluten is telling to me. Even if the blood test is negative, keep pushing forward with your idea. If the dr wants him to have an endoscopy, then he needs to continue to eat gluten for the test, don't take him off. If he doesn't want more testing, then just follow the diet and keep track of the results. But don't let him be hungry...
  14. I used to do once a month food prep. It was great during soccer season! Just doing all the meats is really a great idea. I usually do most of my week's cooking on the weekend but preparing the meat for a month is a fine idea.
  15. Welcome to the Forum! It's the best place I've found for info, lively discussion and, best of all, recipes!
  16. I only had it before not after. If I have any symptoms start to creep up, I know I've eaten something I'm sensitive too, like too many complex carbs.
  17. It's always good to be tested at your yearly physical for things like thyroid and blood sugar. They are part of normal bloodwork and your dr should normally test you. Look back at your medical records to be sure. You can ask for a copy of any testing you have had. When your dr is aware of your family history, he may want to keep an eye on those other conditions...
  18. I would lay off the Betty Crocker. I've found that all grains are a problem for me but especially mixes. I'm not sure about that mix but most of them can have very small amounts of gluten. Some folks it doesn't bother, but really sensitive folks can react. The whole foods advice and the diary is good.
  19. Still sounds like nerve stuff to me. How much B12 are you taking and which kind?
  20. You'll find the thread under "Other Food Intolerance and Leaky Gut Issues". It's called Specific Carbohydrate Diet (SCD). If you read parts of it, they do recommend web sites and books. I haven't read the books yet but have looked at some of the sites. It's good. I'll defer to the SCD experts on that thread.
  21. Well, the Angie Diet is always evolving and as I feel better and better, I refine it more. Right now I eat all meats, some foods like sausage, I buy plain ground pork and season it myself. I cannot tolerate fresh dairy but substitute soy milk and I still have some butter and eat cheeses. I eat grapes with cheese almost every day. I eat all fruits except...
  22. Thanks! I will try this. Have been missing pizza since giving up most grains.
  23. Mine split open too. It's not as pretty as with flour tortillas but it tastes great!
  24. Getting dx'd is a very personal decision and no one would think the less of you here if you need a dx or if you just choose to go on the way you are. I also would not eat gluten for a DX after I finally had insurance. I didn't think I could do it. But if you feel you really want a dx, you could ask your dr if he would dx you based on dietary...
  25. If your friend or family member came to you and said, "I have a peanut allergy. I cannot eat peanut, it's products or anything cooked or packaged around them." Would you think them a burden or inconveniance? No, because you care about them and you would gladly acommodate them. You are not a burden and they care about you. Don't sell them short.
