  1. These mixes are safe for those that can tolerate processed food. A couple ideas: 1) You are intolerant of something besides gluten. 2) The equipment you used to prepare and bake the cookies - is it possible these were used prior to removing gluten?

  5. One crumb can be just as harmful as a loaf of bread...the point here is until you remove ALL gluten your body will continue to attack itself. If you understand that you should not eat a loaf of glutenous bread than understand that a crumb of that loaf is not acceptable either.   6. Welcome Robin! Nicole has provided excellent advice. I want to stress...do have the tests done before removing gluten. It can take quite a while to heal from undiagnosed Celiac Disease and it is not easy to remove ALL gluten from one's life. If you skip the tests you may be left with more questions and uncertainty which can cause more problems down...

  8. Welcome! Did the doctor run any of the other Celiac Antibody Tests? The Deamidated Gliadin Peptide (DGP) - both IgA and IgG are most sensitive...they are the first to rise with gluten ingestion and the first to fall when completely gluten-free. If you are being as careful as stated above -- I would carry on and wait another three months to test...
  9. Welcome Steffi! Yes, many folks have symptoms of all nature return during the gluten challenge. If you are not able to tolerate gluten talk to your doctor about moving up the endoscopy date and or removing the challenge. While the best results come while ingesting gluten -- not all intestinal damage repairs in days or even weeks. Did your doctor...
  10. Yes, my reactions became far worse -- I think my first oops was at a couple weeks and it hit me like a truck. You may find as time gluten free goes on these reactions will become even worse. It's like the body gets used to not fighting gluten on a daily basis and then reacts vehemently when it detects even small amounts. On the deli meat...do be careful...

I simply tell the server I have many allergies so i have brought my own food...never had a problem....I do always order a beverage. I am not suggesting that you should not go to the doctor if there is real concern, but it sounds like this may be a one off after a week of not being regular and trying several remedies for constipation. I have no idea what caused this sweet smell -- but unless it happens repeatedly -- I would watch, wait and take note of bowel changes as you become completely...

  19. Welcome to the Club Kim! We also use Corn Starch mixed with water to thicken sauces....as time goes on you'll learn the easiest ways to replicate everything that used to have gluten in it. For now...do keep it simple - whole, non-processed foods are the best for a healing gut and are the least frustrating to prepare. Rice pasta is great when done...

  22. I agree regarding medic alert bracelets for adults....as stated I wear mine as I have severe breathing difficulties and have had three anaphalaxis episodes which have worsened over time. I respectfully disagree for children.....my Grandson is five - gluten-free for four years and completely able to explain his dietary needs and safety to any adult -- yet...

I am now four years gluten-free --- not sure exactly when this symptom improved....I think it was at approximately 18 months gluten-free.   24. Welcome! Inflammation in the body can indeed be caused by Celiac Disease. Once gluten free many autoimmune symptoms can resolve completely or greatly improve. Celiac Disease is genetic...Mom, Dad and any siblings need to be tested at 3-5 year intervals or more often should symptoms arise. Good luck with the endoscopy at the end of the month...
