You may be intolerant (not allergic) to something else. If you want to remove the most likely culprits I would suggest corn, soy, dairy, nightshades, and possibly legumes. I don't think it's unusual to be sick a week after a glutening. Remember, you've been glutened twice in 30 days. That is about equal to not having gone gluten-free at all. It really is best to stick to nothing but whole foods at first. They are not ony easier for you to digest, but they reduce the chance of accidental glutening. And drinking (or eating) anything... -

Are you putting up sheetrock? Sheetrock mud is full of gluten and when you sand it it gets in the air like flour dust. You breathe it in and it gets in the back of your throat where you swallow it. I hope for your sake it's not an additional intolerance. That happens to a lot of us. Maybe it's just some kind of "bug". But if it doesn't get better in a while you need to start keeping a food and symptom diary. The most common offenders are dairy, corn, soy, and sometimes nightshades. Well, if it is neurological damage from celiac it could well take more than 14 months to heal. Neurological symptoms are the last to go and in some folks they never completely heal. I'm sure they tested your thyroid. That can cause carpel tunnel-like symptoms. So can Lupus. I know how hard it is to deal with symptoms when you thought by now you'd be better... -

You need to eat! Honestly, by not eating you are making both your symptoms and your anxiety worse. There are plenty of gluten-free foods you can eat without worry. Bake a potato. Cook up a burger or a pork chop. Shred the meat onto the potato. Throw some of your favorite cooked veggie on top. Then eat a third of it. In a couple of hours eat another third... -
Not familiar with that but I know there have been studies claiming that oolong tea (not black tea and not green tea) can help to calm the autoimmune response. If you're scared of eating because it hurts you may not be eating often enough. (You say it's more intense on an empty stomach.) Try eating small meals several times a day instead of larger meals three times a day. An empty stomach can very well lead to all of the symptoms you describe. -
Allergies are not the same as intolerances or celiac. If you are reacting with runny nose and such you most likely are allergic to these things, in which case you should have an epi pen. A food that makes you sneeze today might give you full blown anaphalactic shock tomorrow. I don't know what a vaccine for allergies is. I know that some people get shots...

Another thing that helps is to drink a cup of ginger tea right after eating. It's best to use fresh ginger root. Shave some off, steep it, then strain it. You can add a bit of lemon and honey too if you like. But if you can't do that, any form of ginger will help. Meat, broccoli, sweet potatoes. You can't beat the nutrition in that combination. I still eat rice but not as much as I used to. And I avoid soy even though I am no longer intolerant to it as I once was. Who needs the hormone effect or the GMOs? I am lucky in that I never lost dairy as so many with celiac did at first. It seems like doctors try to cover all the bases and test for everything in the book. I'm sure some do it because they're good doctors. Some do it so they can squeeze more money out of your insurance company. And some do it to avoid a malpractice suit should something unexpected turn up. I think the only thing they don't usually test for is celiac!

A number of people here who went untreated for years can tell you. Some have MS, some have diabetes, some have lupus, many have thyroid conditions, some have cancer. Would we have gone on to develop these conditions if we had gone gluten-free right away? Maybe, maybe not. But why take a chance? Especially with the prevalence of good tasting gluten-free foods...

When I cook Against the Grain pizza I just use a disposable pizza pan (2 for a dollar) and it never comes out doughy in the middle. Maybe the pan being so thin makes the difference. They suggest you put a cookie sheet underneath but I don't. Instead I just slide it out of the oven onto a cookie sheet.- 7 replies
