  1. Probiotics are good bacteria. I take a brand where you have to open the capsule they're in and mix it in a little water for fifteen minutes before drinking it. Somehow that lets the bacteria survive the acidity in the stomach better. Anyway... I call the mix my "bug drink".... Pauliina

  4. Are you taking a probiotic with your antibiotics? Otherwise you're going to wipe out the good bacteria in your gut, and that will make you more suspectible to other bugs again. Pauliina
  5. You have a weak positive blood result, a suspicious biopsy, and a positive from enterolab (and I assume, symptoms that made you go for testing in the first place?). I can see that just one of those might still feel like too little evidence, but all those together, and all pointing in the same direction? Are you gluten free yet? Pauliina

Actually I read somewhere (and it's so annoying that I never remember where, because I'd love to give you the reference) that it's not the fat, or that it's not necessarily the fat, but too much gas in the poop that makes it float. So the poop is porous like foam and floats. It would make sense with celiac, at least, the gas, I mean. Pauliina
  8. I sometimes just cook a pear in the microwave, cut up in pieces it takes about two-three minutes in my old and very inefficient microwave to cook. I find it sweet enough by itself nowadays, i'm not that used to very sweet things anymore. Pauliina
  9. The blood test can be used to check how well you've been following the diet. If there are detectable antibodies in your blood, it means it's likely there's some damage to your intestines, too. And it definitely tells you that you have had some gluten! (Although if you knowingly cheat, you know that already, lol). Pauliina
  10. It takes me about three weeks before everything is completely back to normal. If I get glutened again during that time it takes another three weeks plus some. Actually it sounds like you have been glutened quite often in the last months? It might take a while to get over that again. Pauliina

Just one thing to point out (ok, two): After two years gluten free, what you would EXPECT to see is "inconclusive" blood test results. That's the whole point of the diet, that you don't have the constant ongoing reaction anymore, and hence also no antibodies to detect. At most it...

  16. Sounds like you're lactose intolerant. Lactose is the milk sugar, and it gets broken down when cheese matures, so matured cheese doesn't have lactose. This means you should either avoid milk products with lactose, or take lactase pills (the entzyme that breaks down lactose) before eating anything with lactose.   19. I just wanted to report that I continued my applesauce experiments -the answer was obvious, once I thought about it: cinnamon, of course! So now I've got: warm applesauce, mixed with some coconut cream (the creamier the better) and cinnamon. Tastes like apple pie, yum.... Pauliina

  21. Yes it's possible to be both intolerant and allergic to gluten, those are two different reactions after all. In your case though it sounds more like you're intolerant to gluten and on top of that allergic to something in barley, no? Otherwise you would get the respiratory reactions to everything containing gluten, too. Pauliina
  22. I think you might have been craving the proteins and not necessarily the fat in nuts and milk products. Gluten containing grains have much more protein than the not gluten containing grains, so when you cut those out, you are in fact getting less protein than before. I find myself eating more meat and fish nowadays than before going gluten free. And the SCD...
  23. I read something similar by a Dutch doctor recently. He said that there probably were some people who would have all the celiac symptoms, and feel much better gluten free, but never develop complete flattening of the vili, and who would have a hard time getting an "official" diagnosis because of that.   24. I can't tolerate cow's milk, but I'm fine with a little bit of goat's cheese. I try to keep it in moderation though, and, I wasn't very sick to start with, I got better pretty quickly. So my case might not be something to go on. Pauliina
  25. I'd definitively look to eliminate all possible sources of cross contamination first, and only then start thinking about further allergy testing. Your symptoms sound exactly like your getting mildly glutened somehow all the time. Pauliina
