  1. So true Susan--95% keeps a celiac from healing. This is from Dr. Green's new book---I can't find where I read it, but here goes! He says, it's like falling and scraping your knee--as long as you don't fall again the knee will heal, but if you fall on it day after day, then it will never heal. Celiacs is the same. If you go gluten-free then you heal, but...
  2. There is much discussion in another forum I attend about celiacs being a disease or a syndrome. This doctor believes it makes more sense to call it a syndrome. In my opinion, it doesn't matter what you call it--there is no cure--it is with us for life--this was my response to the forum: Sometimes these people make it sound too easy. Celiacs is a disease...
  3. I used to eat cheetos and fritos corn chips with no porblem until I developed the corn intolerance--now no corn chips and I loved regular corn chips with cheese melted over them. Oh well, life goes on! Deb
  4. Love this thread--I always used to dip my french fries in a chocolate shake--that's weird? Hmmmmmmmm and cottage cheese and doritoes, I used to smash the doritoes and add them to the cottage cheese--sometimes I added tuna! Princessa--I used to eat peanut butter and miracle whip sandwiches with a fresh tomato slice added--most of your ideas are shared ideas...
  5. I don't know if you are dairy free too, but Mac and Cheese made with Tinkyada macaroni is pretty good, even my daughter liked it. I am sure if you like spaghetti, you would like the Tinkayada brand of spaghetti too. Otherwise, I tend to stick to the things I know are gluten free. If I need some junk food, I get some regular Lay's Potato Chips, I buy Dole...
  6. It's an individual decision--my sister and myself, both gluten free for 5 years, have always eaten McDonald's fries and never had a problem. I haven't had a french fry since moving to Long Island, but that is from personal preference--I don't eat fast food to begin with. My sister had them 2 weeks ago with her grandchildren and is fine. We both react to...
  7. I was 46 when I went gluten free and I now realize I had symptoms most of my life. I didn't know then they were symptoms, but now I do. I always had problems with food that contained oatmeal, always had trouble with foods that contained flour-my symptoms worsened after my first pregnancy at 18 yrs old. This may explain why I never feel completely better...
  8. Ursula--I had never heard before that some people never completely heal. I guess I thought if you were gluten free then you should be ok. I don't feel that I ever completely healed, I just didn't realize it was possible. I am 85% better then I was 5 years ago, but I don't feel I will ever be 100%. I was sick for well over 25 years before going gluten...
  9. I will be gluten free for 5 years in July. Before going gluten free, I had panic attacks, borderline agoraphobia, anticipatory anxiety plus diarrhea nearly every night, joint problems, stomach cramping nearly all the time. The one food I thought was ok for me to eat, toast, turned out to be one of my worst villians. I was very overweight, being one of...
  10. Even when I was the sickest, I tried to do as many things as I possibly could. I didnt work outside the home then and knew I would not beable to hold down a full time job. I not only had diarrhea much of the time, but I also had panic attacks to deal with and anticapatory anxiety. I used to envy people so much--they have no idea how lucky they are to beable...
  11. Hey RG--I live in East Islip, just maybe 2 miles from Oakdale. I work in E. Islip and one of our employees drives here from Merrick everyday--it's not that bad a trip for a good gluten free meal. Wednesday nights is gluten-free pizza night at Mama's--our Suffolk County Celiac Support group eats at Mama's often. Deb
  12. The GIG has tested the fries and the oil and have stated that McDonald's fries are gluten free. There is no class action suit. I never doubted the fries were safe. McDonalds did handle the releasing of the information in the wrong way--it should have been released as stated early in this thread. My sis had fries there just last week with her grandkids...
  13. I went to Boston Market here with my sweetheart--we are on Long Island--we went to the Boston Market in East Islip. We gave them our order and I told the girl, no biscuit on my plate, she says, "But the meal comes with a biscuit!" I repeated that I did not want a biscuit and she said the same thing again. Kev said, "She can't have bread, NO BISCUIT, if...
  14. Well Stef--I am guilty of not reading in this forum everyday--I belong to so many other forums. I dont know anything about diet drinks and probably wouldnt try any because of not knowing the ingredients to be safe.. Jen, I must add here that most celiacs are not wieght loss victims. It truthfully runs about half and half. Some of us dont lose when sick...
  15. My B12 level falls within the normal ranges and I still do a sublingual 1200 mcg B12 supplement daily. I have peripheral neuropathy now as a result of celiacs and they tell us that normal ranges are not high enough for us. B12 deficiencies open the door for other diseases to come in--try to keep your levels up--ok. Deb
  16. I have never been much of a drinker, but now, a little wine makes me so ill by morning that I dont drink anything, it's not worth it to me. Deb
  17. Well Mom, I can't tolerate tomatoes, could be the ketchup--I also have problems with hamburger beef--it's too greasy for me. Sometimes you have to stick to a bland diet for sometime so that your tummy can heal. I have been gluten-free now for 4 1/2 years. In the summer of 2004 I found I couldn't tolerate soy products, then in Dec of that same year I found...
  18. I do know that celiacs causes chemical imbalances--before going gluten-free I suffered terrible panic attacks--was on xanax first and then paxil for years. I was taking 40 mgs of paxil when I went gluten-free and I still had panic. After I went gluten-free, I weaned myself off paxil. That was over 4 yrs ago--now, at 50, I am under so much stress again...
  19. A doctor told me that canker sores are cause by stomach acid and I do find that I get them when my tummy has been upset. Deb
  20. I know that low iron makes you cold--I always take Nature Made Woman +50 and I grabbed the one without iron in it and didnt realize it--its called Woman 50+. I couldnt figure out why I was so cold and tired all the time. So, yeah, iron does that. Gointribal, why would you eat gluten for any reason if you know you must be gluten-free. Save your hair and...
  21. This is an email from my celiac support group here on Long Island. I thought you might all like to see this too: Hi Everyone, Please read the following - it concerns and affects all of us. This was originally posted on Delphiforums: "I bought a book the other day, "Talk to the Hand" by Lynne Truss, She's the lady who also wrote "Eats, Shoots ...
  22. My sister always tells me I need more fiber in my diet--this is a recipe she put together to get more fiber for us--she is a dietician and celiac as well--try these, they are very good: Muffins 20-25 mins @ 350 1 cup shredded carrots 1 cup shredded zucchini 2 apples, peeled and shredded 1 cup raisins 1 cup nuts Mix this all together and...
  23. When I read the title of this post, I thought you wanted to hear from the senior celiacs and I was hoping at 50, that you didnt think I was a senior yet. Here you are talking about those of us who have been gluten-free for some time! So, now I guess "I" am kind of a senior. I have been gluten-free now for 4 1/2 yrs. I was ill a good share of my life...
  24. To begin with it takes more then a few weeks to heal--some people take up to 5 yrs, average I think is around 2 yrs. I dont know if anyone truly knows how much damage is done by celiacs disease and a celiac must stay gluten free. Any gluten is too much. If you eat gluten on purpose, you are only adding to the damage already done. Sometimes we do get glutened...
  25. Dani--To begin with, your body hasnt had time to heal yet. Maybe you are eating too much fruit and too much gassy veggies. I cant eat gassy veggies and I have been gluten-free for over 4 yrs. I cant eat tomato in any form. Are you dairy free too? In the beginning I ate cottage cheese with fruit in it a lot of the time. I had my rice cake with peanut...
