  2. As Addy said, any all purpose flour mix (even baking mixes like pamelas) make great thickeners when used in a roux. I generally make a roux with half corn starch and half brown rice flour, but if I am out of one, I use whatever flour is on hand.   7. If it is really affecting you and your coworkers are doing things like sneaking the food back there, speak with the head of the office and let them know that this is serious, and to please institute a no food rule at the area your work space is in.
  8. I think it isn't good to decline social invitations because of a food issue. Unless they are throwing flour around the house, there is no reason you can't go and enjoy the company. Either buy some frozen dinners or pack yourself something, and when you are accepting an invitation, let the hose know you have special food needs and ask if it is okay to use...

  11. For cold packed sandwiches I like to make wraps with corn tortillas. Easier than trying to get your gluten-free bread in an edible state when it is cold. Hard boiled eggs keep very well in a lunch pail, too.
  12. Generally, anything that is being aggravated by untreated Celiac disease is going to heal up after the gut does, which is a slow improvement after going gluten-free. It will likely take a good bit of time, and there is a possibility of it not being related to the Celiac. Just keep the lines of communication open with your GI doctor and hope for the best...
  13. Allergies and the meds that treat them will cause me to get puffy eyes and dark circles. There isn't much I can do for them other than take benadryl, which will make me need to nap. Have you tried an antihistamine to see if it helps?

  21. I really want to try the california pizza kitchen now that they do gluten-free right. Do they use the same prebought crust as a lot of other places? The closest one is an hour away by m rheumatologists office, and I go monday, so I will probably go in and eat if I have time.
  22. Yes, usually when I make it, I will use 1C of dry quinoa which makes 3-4 big servings, and it stays in the fridge well. Quinoa doesn't overcook and change texture easily so the texture keeps, too.
  23. I sometimes make what I call quinoa oatmeal. I cook it up in a pot with half milk, half water, and whatever fruit like granny smith applies, a dash of cinnamon, etc. It keeps through the week nicely.   24. Yep, the fact that your total IgA is so low, means the tissue transglutaminase IgA is not reliable. The IgG one is positive. It would be a good idea to look into getting an endoscopy done so you can get a biopsy and follow through with a proper diagnosis.
