Hi Dessa, I find that if I eat out (once every few months), I can tolerate a caesar salad. No croutons, obviously, and bacon bits only if they're real bacon. Fake bacon bits are made with wheat. You may be intolerant to gluten, but you're also very likely intolerant to other foods as well. The welts could be an allergic reaction caused by food, but brought on by scratching your skin. Actually, I find I have loud and smelly gas ONLY when I have eaten certain foods. Like I gave in to a craving for bread and ate some gluten-free bread, and bingo........smelly gas. Or potatoes, or even chocolate (all gluten-free, of course). If I am good, and stay on my stupid restricted diet, I don't have gas at all, or at least it isn't loud and smelly...

Yes, seriously, all your symptoms could be caused by celiac disease. Also, you could be low thyroid. Check out this website, and keep track of your body temps for a while to see if you may have that problem. My tests for thyroid came back negative as well. But I have consistently temperatures that are way, way too low. I charted them for a couple of weeks, and based on that my naturopathic doctor put me on thyroid meds and adrenal meds (I have adrenal burnout as well). It could be celiac disease, but sounds a lot more like hypothyroidism to me. Do you normally have lower body temperatures than what is considered the average? That would be a good indicator for low functioning thyroid. -
