  1. You look for food that are certified gluten free, as in they tested it below 20ppm to ensure it is safe, you also learn certain brands to trust, and as always whole foods are safe. A apple is a apple, a banana comes with a safe built in wrapper, eggs do not contain gluten...you learn other things and brand to trust. You learn to wash your hands before...
  2. Both, any time the tiniest amount of gluten residue or crumb goes through your intestines it will trigger a antibody reaction and your immune system will wreak havoc on your body, this reaction can go on for weeks-months of ongoing damage weather you notice it or not. And over time can lead to nutrient deficiency, allergies, complications, other auto immune...
  3. Low positive on blood test then "DOUDENAL MUCOUS SHOWING BLUNTING OF VILLI " YEP you have it, welcome to the club you never wanted to join. Damaged vili..yeah that is the blunting..... This disease is easy to manage with diet, and supplements for awhile til they heal enough to get nutrients again. Taking care of this now before other complications, AI...
  4. It changes and the amount and form seems to cause different levels of symptoms.....back in 2016 June, last time I ate something with actual straight wheat in it. I reacted so violently, withing 30mins I felt first symptoms and knew it was going to be bad, I no sooner made it in my door then my legs gave on me and I collapsed in my door way body unresponsive...
  5. LOL I should have linked you flavor god the spice company....they have a spice that makes EVERYTHING taste like pizza, they put tomato powder etc in it so it is like the sauce, spices, etc minus the cheese. I was using it in omelettes and on veggie fries I have found some flax chips from GoRAW that also taste a bit like pizza, Open Original Shared Link
  6. Leaf Cusine is TOTALLY dairy free. Diaya....I am going to be honest, the stock I have is from over a year ago. They changed formula to add in xantham gum, and I bought a several cases and deep freeze them...stuff keeps for years in the freezer. SO either my different formula melts better or my freezing then, defrosting, then using them broke them up to melt...
  7. The fact that a tiny bit of residue or a crumb (think the blood a CSI tech can find in a murder scene) can lead to weeks-months of ongoing damage with a ramping cumulative effect of further exposure can give you a clue to the seriousness of it. I had to go to a dedicated gluten-free only house hold due to the time between accidentally and constant exposures...
  8. I started using only republic of tea (CERTIFIED gluten free) about 5 years ago....I kept on running into CC issues with the 3 other brands I was using (they used barley on other lines) Not had a problem since....though I do get a upset stomach from black teas due to the way they process them like nausea and feel a rush/sick feeling, but that is not a gluten...
  9. Worst of luck lol, I got some coconut chips, they said gluten free on the back but no certifications, I started snacking on them then felt that obvious tightening around my neck odd stomach, later puking, and I knew then. I took out the nima and tested the only new thing, and they came back positive for gluten. Thankfully I was given some glidenX stuff.....

  11. A recent chapter of Generation gluten-free started up in Dallas, Here is a info thing from their site and a link to their FB group. Generation gluten-free, a program of the Gluten Intolerance Group (GIG), is designed to build confidence in kids, teens, and young adults, and help develop them into the future leaders of our gluten-free community. Our goal...
  12. Please check post date, you responded to someone from 2006..... I use a universal pectin in my homemade nut milk icecreams to thicken it, one that works with calcium not sugar. It also have the benefits of having lowered my bad cholesterol.
  13. Might try a bit more of a keto/paleo diet, the high carbs grains could be a issue. Drop dairy also if your one it. I live on steamed/sauteed/freezedried leafy green veggies, egg whites, nut butters, seed butters/paste, nut flour based baked goods, cocoa nibs, and nut milk based homemade yogurt with vegan protein powders in it. Works great for me easy to digest...
  14. The mall thing is a place to buy some gluten free foods. I personally source elsewhere but they have a good selection. Soy can cause gastric distress in some. I can by example eat "soy lectin" but if something contains anything else related to soy I will get really bad bloat, gas, and explosive D. ....I still have nightmares about the times I tried tofu...
  15. Oddly I find rice, carbs, starches make me bloat, between the gut bacteria breaking them down and my ulcerative colitis flaring with them it becomes painful annoying and causes all kinds of stool issues and bleeding. My dad did the cheddar biscuit version with dairy cheese just fine. The almond and coconut ratio is pretty much needed a rice flour will...
  16. Celiac disease can be dormant and brought on by stress to the body. Honestly I your the 5-6th person I have seen have this kind of thing triggered by child birth. Yes everything can be accredited to celiac disease but you need to be tested for it. Screening is simple but you need to be eating gluten daily at least 1/2 a slice of bread a day for 12 weeks prior...
  17. Got many grain free options here, I got a flatbread/pizza. dinner rolls, lemon cake, mug cakes, I avoid grains, and starches and the carbs and sugar rushes are really bad for my other autoimmune disease. I tend to use psyllium husk for a doughy binder, as it seems to break down easier and not bind to fats and float in my stomach like other gums. https...
  18. Read the newbie 101 section to see about clearing out the house, pantry, fridge of stuff. Toss scratched cook ware, wooden spoons, condiment jars with crumbs, anything gluteny and clean up really well. Gluten is a protein smaller then a germ, think like blood and cleaning so the CSI team will not find the traces, bleach does not work to kill gluten, on the...
  19. Skin contact reactions like that are not celiac...perhaps you might have a wheat allergy? I get skin contact reactions like that to corn as I am highly allergic, also get blood blisters in my mouth and fever if I eat any thing with it. I would avoid a food industry job unless you can get work in a gluten free dedicated restaurant, would be a great opportunity...
  20. Celiac constipation is a major side effect of Magnesium Deficiency, try a natural method of fixing it and drop the laxatives which are only going to compound you issues. GO with Natural Vitality Calm, it is a magnesium citrate, Start with 1/4 tsp a day slowly up the dose over a week to 2 tsp, you might need more like me or less. You dose til you get loose...
  21. I tell people about my disease and my allergies if I am going to be around them. I do not need them offering me stuff or endangering me with said items. If they opt to make fun of me or Bring said items near me after repeated warnings it shows who your true friends are and who you can really trust. This way it weeds out the good people from the assholes and...
  22. Yeah Hershey in my bakery, the Dark says gluten free in small letters on it, the plain I was cautious about myself but on their website it is listed under the gluten free products and I have been using it in my bakery for the past 2 years. Before that I used a raw expensive one from Big Tree. Only a few brands you need to be concerned about gluten....fact...
  23. For me most my life I had tale tale symptoms, and stuff was happening for so long I considered many things to be "Normal" I did something stupid in my early 20s that shocked my immune system and made my symptoms change to things much more noticeable as puking, worsened fatigue, gut pain so bad I sometimes could not leave the bed, random bouts of extreme confusion...
  24. Depends....most the time I call ahead and bring my own food to a meet up at a restaurant....safer. Few dedicated gluten-free restaurants out there and some that have dedicated cook areas for gluten-free. Many places off gluten-free options but will make you sick as they are catering to the "Fad" dieters not the medically required. Examples of this are do...
  25. First year is brutal, I had to remove ALL processed foods, I had SOO many food intolerance issues and random foods just made me puke. I went to a simple whole food diet, and had to cook all veggies to mostly mush. Found many I could not eat for a long time. Keep a food diary and cut down to only 1-2 foods from each category working with a dietician to make...
