  1. Bit of progress end product still contains gluten....just less of it.....I would still play it safer and just eat non wheat containing foods, and stick to my grain free diet. I honestly think they are going about this wrong, instead of altering the genes of the food that we react to....why not fix us....I money wise it seems like a bad idea for them and...
  2. This disease is like a chameleon and seems to change symptoms on people and everyone is a bit different, heck some have no symptoms til it almost kills them with secondary issues like cancer, lymphoma, rupturing the intestines etc. I did not have ht classic D but constipation, I also had a bunch of other signs that I had grown into and considered normal...
  3. I had to elminate, carbs, and sugars also due to UC, but I haveen cooking for diabetics for years in my bakery. I do keto based breads, grain free baked goods, nut butters, etc. I have a few grain free low carb recipes in the cooking section like Keto low carb dinner rolls, flat bread, crackers, etc. My bakery also sales keto loaf breads that are a huge hit...
  4. I am more stressed about what sales will be out on cyber Monday and black Friday then the actual thanksgiving holidays lol. Cooking is just cooking, I do it daily, just doing more and some special dishes. NOW once a year sales on products I use daily like supplements, spices, foods, flours, etc....now that has me stressed. Like I have a limited budget but...
  5. Umm Spicely is one of the few I trust, and they tested negative after some asshat came here claiming gluten on them last time. I wasted my money and time Nima Testing my spicely organic spices. I use them as a gluten free chef, and baker. I also have UC and I can tell you, anything but the smallest amounts of garlic, onions, or hot peppers will set off...
  6. Have you had the blood test for celiac? Or how about a endoscope with biopsies? These are the standards for checking for celiac disease. http://www.cureceliacdisease.org/screening/ IF your diagnosed with celiac you have to follow a STRICT gluten free diet, as crumbs, or even residue from shared utensils/cookware/prep surfaces/shared condiments can make...
  7. Yeah mine was the constipation really bad, it clears up some but my constipation was partially trigger by the damage causing malabsoprtion of magnesium leading to the constipation along with other things and complications. All sore layers up into a big compounding issue, example the tiredness is a combo deal to and varies from person to person, part of it...
  8. You do not want to chance it before flying....then being married to the toilet in a airplane for hours. Play it safe, bring meal bars, Julian Bakery, BuuFoods, Kind, etc. Airports normally do have not have issues with prepacked dry bars.
  9. First off as a paranoid sensitive celiac I do not get why the flipping flack anyone with celiac would allow gluten flour in their own kitchen OK paranoia aside damage control. First try using freezer paper for fixing and prepping the gluten bread on to prevent CC in the kitchen. Use new freezer paper to prep your food later, Make sure different mixers...
  10. I posted a grain free gram crust option awhile back, I just made a vegan pumpkin pie today in it with full fat coconut milk, seems to have set up good. I made it for my church since the carbs are no for me.
  11. FOUND my sugar cookie recipe from way back when....THANK you for reminding me I also found a recipe for choclate sugar cookies, fudge balls, and even a sugar cookie cake recipe in my old binder I am wanting to make again. Here is my old recipe tell me if it works out Sugar Cookies 75g Almond flour 1/8 tsp salt 1/8 tsp baking soda 30g (2tbsp)...
  12. Try using the gluten-free blends in a about 1 to one replacement, first start off with about 1/4 less then add by the tbsp til the texture is about right, as gluten-free flours sometimes cause the end result to be a bit drier. I honestly make a sugar cookie with almond flour that works great for the holidays, I do not use dairy or creamy butter so mine is...
  13. VERY much so. as me and poster boy can both attest just because levels are normal does not mean you do not need more. HECK their was even talk about raising the FDA recommended daily value of it as it was the suggested minimum. Either Docters best glycinate before bed or if you have C issues or no D issues then perhaps natural vitality calm citrate version...
  14. Well my idea of doing the broccoli dish with a mushroom duxelles flopped, seems the local mushrooms are still gluten contaminated Yes I tested them with a nima.....and stir fry mushrooms in the polar cans do not work so well with this version of the duxelles. SO what I am going to do is take my bacon seasonings mix and use it on some baked Brussels sprouts...
  15. I still vote on removing dairy completely for 60 days. This could help in many ways Probiotics are helpful normally later on, but initially if she has damaged or leaky gut it could make the issues much worse. It works for some makes stuff worse for others. I keep going back to the dairy as it is common to cause a feeling of bloat, fullness, inflammation,...
  16. Awol touched on what I thought it could be, night numbness and cramps is often a magnesium issue, Also with gluten ataxia nephropathy is common causing numbness, tingling, or control loss. As you mention a constant I am thinking perhaps more of a deficiency, Raven goes on another topic, I had a issue in my shoulder messing up and pain and numbness in...
  17. I found out how to make gluten free/grain free protein based gram crackers awhile back, and I cut them to shape before baking them. Tech you could use this method to preshape/make the sides and roof then stick it together with a icing. Alternatively you can try making one with gluten free gramcrackers from the store and icing. The powder I used has that deep...
  18. Love these ideas >.< I just finished a entire pot of Banana Forester Coffee from Christopher bean. LOVED it. bit of sweetener and OMG heaven. Many of their coffees are dead on I have been doing reviews on them and sampling for months PS I think the code was 5BEAN or 10BEAN to get you 5-10usd off your orders the flavored ones are the BOMB. I would...
  19. Call the local growers of the ones they carry in store.....I did the ones in my stores are grown from rye seed starters seeded with the fungi spores. Seems some gets into the finished mushrooms as they were making me sick. I have had luck with POLAR canned mushrooms and shiitake but I have to also rinse the salt out of them like crazy.
  20. LONG POST incoming I got my cheese sauce recipes compiled and going to throw in my frosting....and yes I normally eat it by the spoon, I make a sugar free version with lakanto. 4 Of my Favorite Cheese sauces Will list the ingredients for each one, they all use the exact same cooking method which will follow. Super Sticky Mozzarella 1/2 cup...
  21. If it is a lactose issue it will probably still bother you, early on over 10 years ago with my lactose intolerance I tried the goats cheese, it was not as painful but it still caused issues. You mention nuts, tried nut butters? I tolerate nut butters and cheese made with nuts very well. Homemade cashew cheese is wonderful but being not a true nit it can...
  22. Yes Vitamin K is a big thing in my diet, not for the calcium issue for for helping stop bleeding. Due to the UC I make sure I eat something like kale, spinach, butter leaf each meal ALWAYs, paranoid about sorta funny. But I hope a constant supply helps my blood clot faster and perhaps lessen the anemia from bleeding internally.
  23. I hear you on this, I live alone, isolated by allergies, and this disease often, spending the evenings alone wishing someone would come by and join me for tea, coffee, or hell even board games sound great at times. I find myself trying to help others on these boards with my knowledge, feel useful and needed. I drink flavored teas, from republic of tea, and...
  24. Well I wish mine was dia. earlier, I got all kinds of other food issues, and other auto immune disease that came up as complications. If you deal with and change over now you can prevent a even more limited diet. I was running a bucket list thinking I was going to die before my dia. I had slight symptoms most of my life but just thought they were normal....
  25. Check back on the post from the past, I did one 1-2 years ago with the recipes for my dressings etc I think. I use Riverside turkey says no gluten...I do not eat it but I know I can cook it for the family safely. I use Authentic Foods Potato starch for dusting the pans, thickening gravies, dusting the turkey bag (a turkey bag can be used in the oven to cook...
