My dad is a CGA in Calgary, and he says you also need a letter from you doctor confirming the diagnosis. It's a huge pain, for most of us to figure it out ourselves. We don't do it here at our house. I am VERY proud of what I do. I work as an Aerospace Controller for the Canadian Forces. I LOVE my job. Keeping my eyes (electronic though they may be) on the skys, and keeping my pilot safe...who can ask for more. I LOVE going to work each and every day. -

I would like to echo what Geoff said. My wife is VERY suppoertive and for the most part our house has gone Gluen Free. When we all sit down to eat together (which is quite often) she only makes one gluten-free meal for everyone. I find this diet is not as hard as I first thought, and your fiance will get used to it. From what I have now read and understand, ANY food service place in Vegas can/will adadpt anything to make it safe. Also, if you find yourself the concierge at your hotel, and let them know your dietary restrictions, and where you would like to go for a meal, they will make the arrangements for you. It makes a far better dessert topping than an actual cereal. -
Our Thai place here in town tell uson the menu to let them know if we have wheat/gluten problems. She will then adjust the recipies to ensure they are safe. I eat there a couple time a month, and have never had a problem. Just make sure you explain as well as you can what you food limitaitons are, and if they are still un clear, try somewhere else.

When I was in Winnipeg a few months ago, I have to admit I was IMPRESSED at all the options available. Especially down on confusion corner. There was an AWESOME market there that had all kinds of stuff. Also, we went to a Thai place in the village that was very helpful in helping me select something that was appropriate for me.

Not sure, but at the Sobey's Deli here, they gave me a card with a list of all the deli products that were gluten free. I can't find it right now, but you can ask right at the deli, they should be ableto tell you. The list also included the brand name of all the products beside the product type/variety. Hope that helps. -

Vincent, Yes, take it from a farm boy, hay is the dried up, baled up leavings from alfalfa and other grasses used in livestock feed and bedding. There should not be any gluten in it. Straw on the other hand is, at least when I grew up, what we called the grain stalkes that were left over and baled up. Normally used for bedding. Hope that helps... -

Some of the poeple I work with so the same thing, and it USED to bug me, but I found out that they were more curious that jerks! Most of them have a hard time understanding that most of the things they can eat that have gluten in them, can also be made without. Once they learn we are not stupid and can managae our diets for ourselves, it will taper off... -

I am now VERY glad the situation is different here in Canada. The only thing that was recently done to my file, as I was supposed to be on deployment to Thule, Greenland for a year, was I was DAG'd red for remote posting only! I was starting to worry about all other postings, and that I may have been released, but there are a few people with celiac disease... -
Barring actually making them, Kinnikinnik has some for sale, and they are amazing! My dw surprised me with them for Easter! Bette Hageman's recepie looks good too though.
